Local Author Pens Beer Cookbook

John Lemmon, Author of “Beer Makes Everything Better”

Dayton native John Lemmon has a passion for home brewing beer. He has worked in jobs from restaurant management to corporate property management and has always found time to indulge his brew hobby. He even developed a beer that is served at Star City Brewery in Miamisburg .  It is a session IPA called “Hip Hop o Potamus.”

The Food Adventure Crew’s Big Ragu caught up with John for a couple of beers at Star City, and although we have known John for 20 years. we recently learned of his brewing hobby.

Now he has added author to his resume.  And it is a cookbook of sorts….

The book is called “BEER MAKES EVERYTHING BETTER.” It is subtitled “101 Recipes for Using Beer to Make Your Favorite Happy Hour Grub.”  Click here for info on purchasing the book.

John’s wife is a very successful author of fiction novels and through her dealings, he found himself in the middle of an opportunity to write a book about his passion.  BEER !

John is a true Food Adventurer.  His passion for brews and food is inspiring.

IT IS IN THE GENES:
After a few years of brewing, one of John’s siblings was researching the family tree. As fate would have it, they learned history was repeating itself.  John’s great, great Grampa Johann (John) Grimm, was listed as a brewmaster in the turn of the century census.   Johann Grimm was a brewmaster for 32 years before prohibition put his company out of business.  This coincidence makes you wonder, was John “born to brew ?”

John also runs a fun blog called “That Happy Hour Guy.”  Stay up to date with his activities on this FACEBOOK PAGE

WHAT THE FUTURE HOLDS:

The book “Beer Makes Everything Better” is selling well, and John just finished a busy book signing event at a Centerville Library.

Ponitz Pave the Path Benefit Dinner

The Ponitz Culinary Program, at David H Ponitz Career Technology Center, Dayton & Table 33 are pleased to present PAVE THE PATH Benefit Dinner, a culinary journey through England, France & Italy this Saturday evening, Jan 27th. There will be two seatings, 6pm and 8pm for this dinner.

The special night will include a 4-course dinner that guides you through the enchanting cuisines of the four locales these culinary students will travel this summer. Live entertainment and an optional wine pairing menu will be a part of the evening. Here’s what’s on the menu:

 

Appetizer 

Inspired by London, England

Crisps Trio – Table 33’s own house made duck fat, Potato Crisps. Lightly seasoned and served with a trio of dips: Baked Pimento Cheese Dip (Table 33 staple), English Curry Dip accented with apples and Riesling soaked golden raisins (vegan), Tomato Bacon Jam with Malt Vinegar

Soup/Salad

Inspired by Paris, France

Choose One

  • Parisian Blues Salad – a bed of winter greens, pear, caramelized pecans, and a brilliant maple dressing all brought together to spotlight a true Parisan Blue Cheese. Served with toast points.
  • Deconstructed French Onion Soup – rich veggie broth using a red wine and mushrooms to give a great flavor (vegan) Raclette Style Cheese Fondue, with toast points for the ultimate experience.

Inspired by Florence, Northern Italy

  • Barolo Braised Beef –Keener Farm’s local, sustainable, 100% grass fed beef, slowly braised in Barolo wine with carrots, celery, mushrooms, and a beautiful array of herbs and spices
  • Baccala alla Fiorentina – salted cod, seared and topped with a Fiorentina sauce of fresh tomato, red onion, olive oil, fresh rosemary and sprinkled with parmesan
  • Mushroom Ragu All’Inzimino – mushroom ragu made with white wine, slow simmered vegetable broth, inzimino a lovely mix of northern beans, chick peas, spinach, greens, fresh herbs and rich tomato puree (vegan)

  • Polenta  – rich with olive oil drizzle, finished off with heavy cream, parmesan, and fresh parsley

  • Italian Cream Cake – Traditional Italian cream cake with pecans (Table 33 Staple)
  • Olive Oil Cake  – Cake made with the finest olive oil and fresh orange zest, rolled in a chocolate espresso glaze, glistened with olive oil and a charred candied orange
  • Panna Cotta  – hand crafted with coconut milk, smothered with a fresh berry coulis, garnished with fresh lemon peel (vegan)

Tickets can be purchased online for $60 for this dinner at Table 33.  Proceeds from the event will help send these Ponitz Culinary  students on a life-changing adventure to Europe that includes educational stops in London, Paris, Florence and Rome! Chef Steph and Chef Head, the co-instructors of the Ponitz Hospitality Management and Culinary Program, have been working with these students both in classroom and off-site, supporting numerous charity events, where they show up as extra hands to support local chefs in their catering gigs.  These opportunities provide real life experience that let these students get a realistic view of the business they will be joining upon graduation.

Beehive: The Sixties Musical

The Dayton Playhouse is excited to kick off 2018 with BeeHive: The 60’s Musical created by Larry Gallagher  which runs through Feb. 4.

What better way to warm up those mid-winter blues than celebrating the female musicians of the 1960’s with such classics as “My Boyfriend’s Back” and “Me and Bobby McGee.” Beehive runs chronologically through the 1960’s beginning with the beehive hairdos of girl groups (the Chiffons, the Shirelles and the Supremes) and wrapping up with the solo work of Janis Joplin, Tina Turner and Aretha Franklin. 

The musical revue of the female artists of the 1960’s will have the audience wanting to sing along and reminisce. The days of miniskirts, transistor radios, juke boxes and flower power will come rushing back as Beehive slides nostalgically through the decade. The Washington Times said, “This hit-parade revue swings from the sweet sounds of the Supremes to Janis Joplin’s heart-rending rasp. From the Aquanet coiffures of the start of the decade to the flowing hippie locks of the Vietnam era, it’s all about the hair, baby.”

Friday and Saturday shows are at 8 pm and Sunday shows at 2 pm.

Super Bowl Footballs Made in Ohio

The footballs used in the Super Bowl have the names of the two competing teams, so they couldn’t be made until late yesterday. A work crew showed up at the Wilson factory in Ada, Ohio during halftime of the second game. They had some pizza and made a little TV party out of it. Then when the game was over and they knew who would be in the Super Bowl they started making footballs.

They worked all night, until five or six this morning when a new crew came in. By the end of today they will overnight 100 footballs to the Philadelphia Eagles and another 100 to the New England Patriots.

The N.F.L. is the only major sports league whose balls are manufactured in the United States. World Series baseballs come from a factory in Costa Rica. Basketballs in the N.B.A. finals first bounced on the floors of factories in China.

Nominations Being Accepted For Dayton Region’s Walk of Fame

TheDayton Region’s Walk of Fame began in 1996 as part of the Dayton Bicentennial celebration, with over 170 people or groups having been recognized since then. Memorial stones are located in the sidewalks along Third and Williams Streets in the Wright Dunbar Business District. A mural designed by artist James Pate highlights the Walk at the corner of West Third and South Williams.

Wright Dunbar, Inc. announces that 2018 Dayton Region’s Walk of Fame nomination forms are now available online . A list of past inductees is available on the same website.

Paper nomination forms are also available at the Wright Dunbar, Inc. office, 1139 West Third Street, Dayton, OH 45402. Nominations must be received by noon on Thursday, March 1, 2018 online or in the Wright Dunbar office.

Individuals or groups from the Dayton region or who have spent a significant amount of time in the region and have made an enduring impact on the local community, the region, the nation and/or world are eligible for nomination. Arts/Culture, Aviation, Business/Corporate, Education, Entertainment/Media, Environment, Government/Military, Invention/Innovation, Law, Medicine, Philanthropy, Science, Significant Personal Achievement and Sports are the categories highlighted. Last year’s honorees were Oscar and Marjorie Boonshoft, Brigadier General Benjamin O. Davis, Sr., Cathy Guisewite, The Honorable David L. Hobson, Allison Janney and Tecumseh.

Bloombeads| freezeframe suspended the service in 2017 due to an overwhelming demand that led to extended turnaround times for completed orders. Dunkin Donuts Makes Changes But Is It Enough?

The first half of 2017 was spent chomping down my favorite, my one ultimate weakness DUNKIN DONUTS. Growing up on the east coast, Dunkies was a huge part of my life and over the years my feelings of love have been quite evident when it came to those tasty donuts. I would joke about how they knew my order at the drive thru and having a dozen or so present when I met with clients was the standard. Donuts were a big part of my life. Dunkin that is. They are something I never thought I would give up. As much as I enjoyed burying my face in them the after effects were not good. Since really diving into food and how everything I eat makes me feel, like many other things – I had to wonder, what’s in those donuts? And like many things theses days, the nutrition information is somewhat of a Magna Carta of bad stuff. But is there hope?

DUNKIN MAKES CHANGES

Like many in the food industry, Dunkin is making changes. News last year about cutting its menu and potentially changing its name was only the beginning.  In a recent announcement,  Dunkin announcement it’s commitment to “cleaner” menus in 2018. By the end of this year, they play to remove artificial dyes across their menu, including donut icings, fillings and toppings, as well as frozen beverages such as COOLATTA® frozen beverages, baked goods, breakfast sandwiches and coffee flavorings.

In August 2017, Dunkin Donuts announces it’s cutting half the menu, toying with the idea of removing “Donuts” from the brand name.

WHAT ABOUT THE OTHER STUFF?

So they’re removing artificial dyes, does that mean the donuts are healthier? I remained curious and did some digging because aside from me loving and craving their donuts often, I had absolutely no idea what was in them.

“Despite Dunkin’s recent decision to eliminate artificial dyes from their menu by the end of 2018, a simple glazed doughnut still contains over 30 ingredients.” – Cooking Light Magazine

30 INGREDIENTS!!!!

I looked into it and none of it made sense, but a recent article in Cooking Light Magazine shed some light on not only the mighty 30 that make up a glazed donuts.

From Cooking Light Magazine

1.) Enriched Unbleached Wheat Flour (including wheat flour, malted barley flour, niacin, iron as ferrous sulfate, thiamin mononitrate, riboflavin, and folic acid)
“Wheat flour” simply means wheat that has been milled (meaning the hard shell, or bran, and germ have been rubbed off) and ground into flour. Unfortunately a lot of the healthy nutrients are in the bran and germ (which is why unmilled, or “whole” wheat is better for you). So this flour has been “enriched” with those other ingredients—a mix of B vitamins and iron. While it’s better for you than unenriched flour would be, as you might imagine, it’s not quite the same.

Sometimes flour is bleached, so it looks nice and clean and white. But that’s less necessary if you’re adding in colors and other additives, so in this case, they’re specifying that the flour is “unbleached.”

 2.) Palm Oil

A type of vegetable oil, palm oil has been controversial for the harmful environmental effects that come with farming and making it, as well as its effects on human health. The World Wildlife Fund reports that palm oil production results in the devastation of large forests and natural habitats in Indonesia and Malaysia. Additionally, palm oil is higher in saturated fats than other oils, making it less heart-healthy.

Dunkin’ Donuts has said they now use 100% sustainable palm oil, though this does not address its poor nutritional value. However, since the FDA’s announcement to phase out trans fats by 2018, palm oil has become an increasingly popular replacement for in processed foods.

3.) Dextrose
This is a common sweetener found in baked goods. Dextrose is a simple sugar derived from corn. In other words, it’s added sugar.

4.) Soybean Oil
Soybean oil is another type of vegetable oil and a common fixture on the ingredient lists of a variety of food products from salad dressing to baked goods to snack crackers.

Why? Soybeans are easy and inexpensive to grow. In fact, they’re the second most-planted crop in the United States. Whether soybean oil, soy flour, or soy letchin, all of these ingredients are derived from the versatile soybean.

5.) Whey 
Remember little miss Muffett eating her curds and whey? Whey (like curds) is a byproduct of cheesemaking. It looks like a thin, watery milk, and is basically a milk protein.  Whey contains lactose, so those with dairy allergies should avoid foods with this ingredient.

There are 2% or less of these:

6.) Leavening (Sodium Acid Pyrophosphate, Baking Soda)
Sodium acid pyrophosphate, which is sometimes called disodium  pyrophosphate, is a dry powder acid. It reacts with the baking soda (which is a base) to make a chemical-based  leavener—it’s basically what baking powder does. This helps baked goods rise while also lending a light and airy texture.

7.) Defatted Soy Flour
Made from ground soybeans, this protein-rich flour can enhance the flavor, texture, moisture, and color of baked goods. “Defatted” simply means the soybean’s natural oils have been removed during processing to minimize fat.

8.) Wheat Starch
Like corn starch, wheat starch is used to thicken and stabilize foods.

9.) Mono and Diglycerides, Sodium Stearoyl Lactylate, Cellulose Gum, Soy Lecithin
All of these are considered emulsifiers that help bind ingredients together. In baked goods, they can give doughs a smooth and uniform texture.

10.) Guar Gum, Xanthan Gum
Both of these are thickeners also used to enhance the texture of baked goods.

11.) Artificial Flavor
Unlike natural flavors, which are derived from plants, artificial flavors are chemical mixtures. They are often manufactured to mimic the characteristics of natural flavors, but at a lower cost.

12.) Sodium Caseinate (a milk derivative)
A milk protein that acts as a thickener in foods, sodium caseinate may be in foods labeled as non-dairy. Because it contains small amounts of lactose, the FDA warns that those with milk allergies should avoid foods with this ingredient.

13.) Enzyme
An additive that extends shelf life of baked goods.

14.) Colored with (Turmeric and Annatto Extracts, Beta Carotene)
Turmeric, Annatto, and Beta Carotene are natural food dyes derived from fruits and vegetables.

Other ingredients include water, skim milk, yeast, salt, and eggs as I’m sure you expected.

If you’ve made it this far, you probably feel as I do which is maybe it’s better to make them myself if I get a the temptation and if you don’t feel that way, that’s fine too. I love Dunkies, but this may get me kicked out of their loyalty program. Moreso than ever I’m recognizing that when cravings come, it’s best I look for the next best alternative,  skip the preservatives, make it myself or take a trip to one of my favorite local donut shop….and in Dayton we’ve got quite a few! Here’s options for both!

A New Kind of Happy Hour

There’s a brand new happy  hour debuting tonight which is focused on wellness and feeling good! 

According to their facebook page, Tonic is a pop-up, traveling “happier hour” in Dayton, where the wellness crowd is gathering to connect, network, learn, and unwind consciously. The concept for these gatherings began last fall and tonight they will share the concept for these recurring events with the public.  Tonight’s schedule includes:

Each event will feature a new collection of local “talent” and artists and feature a themed “playshop” at the start. Playshops range from art classes, to yoga nidra (relaxing and restorative yoga), to laughter meditation, to psychotherapy, to nature and adventure workshops, to educational wellness talks.

Tonights event will start with Matt Parente for Yoga and a Playshop!

Marianne Fink of Wellness Studio at Harmony Farm will lead a very special wellness discussion. Each playshop will be 30 minutes, followed by time to enjoy music, dance, and peruse wellness arts and refreshments.

Refreshments will include healthy options from local restaurants and food trucks as well as unique herbal tea concoctions, Kombucha, coconut and seasonal maple water. Join us and get your weekend of to a healthful start.  Chef Matthew Hayden of Meals From Scratch will be bringing some amazing healing treats tonight that you won’t want to miss!

This Friday, after a 10-year hiatus, Andrew White will come out of retirement to mix tunes at the 1st Tonic happier hour!

This will be  a traveling event. If you’d like to host one at your venue downtown let the organizers know!

Tonic’s first event will be hosted at WellSpace Dayton at 116 N. Jefferson St. on Friday, January 19th from 5:30-8pm.  Tickets for this event are on sale for $20 online.

KFC TALE OF THE TAPE:
Founded by Colonel Harland Sanders, a Kentucky entrepreneur from Corbin, Kentucky who sold his chicken during the Great Depression. Sander’s opened his 2nd store in 1952. It was known as “Kentucky Fried Chicken” until 1991 when they changed the name to KFC. Today it is the 4th largest fast food franchise.

HERE ARE THE PRO’s of KFC:
—The Carolina Gold Chicken Little sandwich is a must eat, it is the best thing on the menu.
—Better Biscuits, no contest… but they always forget to give you butter and honey
—The whole wings are amazing, get 2 original recipe and 2 extra crispy
—Slightly better sides, even the alien “mashed potatoes and gravy”
—The apple pies that are offered at some stores are the same ones McDonalsds had in the 70’s and 80’s – deep-fried ones.
—The popcorn chicken is a winner, Nashville hot sauce will burn yo’ ass.

KFC’s HOT WINGS are no longer longer on the menu everyday – big mistake .

–corporate made poor decision and got rid of two of their best menu items Honey BBQ Wings and Hot Wings
—KFC is not cheap…they price gouge a little
—They close too early

LEE’S FAMOUS RECIPE, TALE OF THE TAPE:
After Colonel Sanders sold his franchise in 1962, he agreed to stay on as a promotional employee.  His nephew Lee Cummings worked on a new chicken recipe and in 1966 founded the first Lee’s Famous Recipe Fried Chicken in Lima, Ohio. Today, there are currently 142 Lee’s Famous Recipe Chicken locations in 13 states across the USA.  Dayton, Ohio has been a national hot spot and testing ground for Famous Recipe Chicken stores.

—The menu has a wider variety of choices country fried steak, oven roasted chicken,  liver and gizzards, white chicken chili, strawberry shortcake, etc..

—During Lent they offer Shrimp and fish sometimes
—Nice prices, specials and deals help your wallet.

HERE ARE THE CONS’s of LEE’s FAMOUS RECIPE:
—The chicken is a little to salty
—The biscuits are awful
—The chicken fried steak is like a TV dinner Saulsbury steak

US Postal Service Price Increase Starts Jan 21st

The United States Postal Service  price changes to take effect Jan. 21, 2018. The new prices include a one cent increase in the price of a First-Class Mail Forever stamp from 49 cents to 50 cents.

Postcard stamps and metered letters will also have a one cent increase.

The next couple of days would be a great time to head to the post office and buy some forever stamps, while they are still 49 cents each.  Check out the great array of forever stamps available:

All You Can Eat Crab Legs Are Back!

Back by popular demand, Basil’s On Market is bringing back their Friday night All-You-Can-Eat Snow Crab legs night!

Starting on January 19th, seafood lovers’ will be able to enjoy this treat from 4-9pm . They will also be featuring their signature truffle fries along with the crab legs.  This special will run  every Friday through March 30th for $30.

Basil’s on Market opened in August of 2016 and  shares a building with PNC Bank overlooking the Great Miami River. It’s part of the Water Street mixed-use development along the river with parking available on the street or in the Water Street parking lot.

The 4,800-square-foot restaurant seats 150 inside, and another 120 or so on a 2,200-square-foot patio overlooking the river and its fountains, when the weather cooperates. The bar has 20 taps of rotating craft beers, as well as a menu of craft cocktails.

No reservation are required, just stop in and enjoy as much crab as your heart desires!

Tour de Donut is Growing!

For its 12th anniversary and its second year in Troy, the Tour de Donut is planning an event bigger and better than ever. The ride will start and end around the square of historic downtown Troy on Saturday, August 25, 2018. Registration for this very unique event is now open.  The inaugural event in Troy brought 2300 riders, the largest participation number to date. This number is expected to increase as the demand of interested cyclists grows. Being Ohio’s largest one-day bicycle event, cyclists travel to the Tour de Donut from 30 states.

 

New for 2018, the Tour de Donut welcomes Be The Match as their official charity partner. For the runners/walkers out there, Be The Match invites you to participate in the Buckeye Donut Dash. This 5k will begin in downtown Troy at 8:30am on Saturday, August 25, 2018 running simultaneously with the Tour de Donut. Registration is now open and information can be found  here . The Buckeye Donut Dash raises funds to help patients in need of a bone marrow transplant. With your support in fundraising, you help more patients afford transplants, add potential marrow donors to the Be The Match Registry and make more life-saving research possible.

The Tour de Donut is a unique bicycle event in which participants’ ability to eat donuts is just as important as their ability to ride their bicycle. During this timed bicycle event, riders visit donut stops along the course. For each donut the rider will eat (and keeps down), five minutes will be deducted from their ride time. The Glazer, a special donut stop, will return by popular demand. Each donut eaten at this stop is worth a ten minute deduction in ride time. A competition will be held between area donut shops during the Troy Strawberry Festival in June to choose the coveted special glazer donut.

Event organizers will offer three different distances for cyclists in 2018. New and improved routes are being designed, free of trains, that will offer riders a fun, challenging experience through beautiful, rural Miami County.

The Donut Mini, a 16-mile course, will return with one donut stop. The Mini awards its own prizes and allows younger riders and families to take part in the fun due to the shorter distance.

The 32-mile course, the Tour de Donut, will offer two donut stops. And, for the experienced cyclist, the Double D Challenge is a 64-mile ride with three donut stops. Prizes will be awarded for these courses in age group classes. Special awards will be given for the most donuts eaten, fastest time (without donuts), and the coveted golden Tour de Donut championship belt for the best adjusted “donut time”.

A free children’s event will take place at 8 am on N. Market Street. All children participating will receive a free T-shirt, finisher medal and all the donuts and milk they care to eat courtesy of Orthopedic Associates of Southwest Ohio.

David Byrne Coming To Rose Music Center This August

David Byrne has announced an extensive world tour in support of his forthcoming solo record, American Utopia. David will perform songs from the new album, which is out March 9 via Todomundo/Nonesuch Records, as well as classics from his solo career and his days with Talking Heads. A twelve-piece band will also join David on stage for a choreographed concert that he has called “the most ambitious show I’ve done since the shows that were filmed for Stop Making Sense.” The American Utopia Tour will include a stop in Huber Heights, OH at Rose Music Center on Saturday, August 11th.

Last week, Byrne announced the release of American Utopia during a presentation of “Reasons To Be Cheerful,” an ongoing series he curates of hopeful writings, photos, music, and lectures. The presentation was given at New York’s New School to a live audience and also was streamed via hisFacebook page.  He also released the first track from the album, “Everybody’s Coming To My House”— co-written with Brian Eno, featuring contributions from TTY, Happa, Isaiah Barr Leader of the Onyx Collective, Daniel Lopatin (Oneohtrix Point Never), Mercury Prize winner Sampha, and others. The song’s visual companion piece can be seen here. “Everybody’s Coming To My House” is available to download instantly with pre-orders of American Utopiaon iTunes and at nonesuch.com. Nonesuch Store pre-orders also include an exclusive print facsimile of an early handwritten lyric sheet to the song.

Beer + Donuts Tasting Event

Pairing two of the best things ever made by man, Star City Brewing Company is partnering with  Bear Creek Donuts for Beer + Donuts: A Miamisburg Pairing on Saturday, January 20 from 1-4pm.

“Being from Miamisburg and occupying the old Peerless Mill, where we are, has always been central to who we are as a business,” said Justin Kohnen, owner of Star City Brewing Company. “There are so many great things going on in downtown Miamisburg too. We’ve been throwing around the idea of doing an event with Ryan Tripp from Bear Creek Donuts for a while now and are excited to see it come together for Beer + Donuts.”

Working closely with Bear Creek Donuts, the suggested pairings for the event include the Mound’s RTG Stout with two chocolate/coconut donut holes, the Great Miami Gose with two sea salt inspired donut holes, the Sweet Cider with a mini apple fritter, and the Hip-Hop-O-Potamus Session IPA with two citrus based donut holes.

“After you’ve finished the pairings, Bear Creek has the literal icing on top for us,” said Kohnen. “Ryan worked with our head brewer, Chad Klehamer and created an exclusive donut just for this event using one of our beers. We’re keeping it a surprise for the event, but you won’t be disappointed.”

For those interested, Beer + Donuts: A Miamisburg Pairing will take place at Star City Brewing on January 20 from 1-4pm. Tickets are $15 at the brewery or online.
