Bistro Dinners at The Winds

Are you one of those people who want to know what’s for dinner and how much it will cost before you go out to eat?  Then you’ll truly appreciate “Bistro Dinners” at The Winds Cafe and Bakery in Yellow Springs. They are offered most Tuesday’s through Thursdays (exceptions for Restaurant Week and holidays).

Your meal will include a salad, coffee or tea and a quartino (about a glass and a half) of red or white wine for $26.  Reservations are suggested and if you know you want the Bistro Dinner, reserve it, they are made in limited quantities, and often sell out.  Here’s the menu for upcoming Bistro Dinners:

Young’s 143 Birthday Means $1.43 Specials

This Friday through Monday, Young’s Jersey Dairy  celebrates its 143rd Birthday with special sales on food and fun all over the farm. A real family business, there are 3 generation’s of Young’s working at the various businesses that are contained on the Yellow Springs complex.  Young’s history begins in 1869 when relatives of the Young Family built the red barn on the then 60 acre farm. They grew grain, raised hogs, and milked cows.  And from there it grew… to what is now one of the Dayton region’s most visited tourist attractions, featuring batting cages, miniature golf, 2 restaurants, and a picnic area that can serve up to 3500 folks. World AIDS Day 2011 “Getting to Zero”

World AIDS Day is an opportunity for all of us to learn the facts about HIV.  By increasing the understanding of how HIV is transmitted, how it can be prevented, and the reality of living with HIV today-we can use this knowledge to take care of our own health and the health of others.

Today, despite advances in HIV treatment and in laws designed to protect those living with HIV; many people do not know the facts about how to protect themselves and others from HIV or about the stigma and discrimination that remain a reality for many people living with HIV.  World AIDS Day is an important reminder to individuals and governments that HIV has not gone away – there is still a vital need to raise money, increase awareness, fight prejudice and improve education.

The theme for World AIDS Day 2011 is “Getting to Zero.” After 30 years of the global fight against HIV/AIDS, this year the focus is on achieving 3 targets: Zero new HIV infections. Zero discrimination. Zero AIDS-related deaths.

Zero New HIV Infections

Testing is the only way to identify the nearly 250,000 Americans currently living with HIV who do not know they’re infected – that’s 1 in 5 of all Americans with HIV. HIV testing and diagnosis are the first steps toward connecting people to life-extending treatment, as well as helping to prevent the spread of HIV to partners.

HIV testing should be a routine part of health care. CDC recommends:

  • Everyone ages 13-64 get tested at least once.
  • Gay, bisexual, and other men who have sex with men (MSM) be tested for HIV and STIs at least annually. CDC data show that sexually active MSM might benefit from more frequent testing (e.g., every 3 to 6 months).
  • Others at high risk for HIV should also get tested more often (at least annually). This includes injection-drug users and their sex partners, persons who exchange sex for money or drugs, and sex partners of HIV-infected persons.
  • Women get tested during each pregnancy.

Zero Discrimination

According to UN Secretary-General Ban Ki Moon, “Stigma remains the single most important barrier to public action. It is a main reason why too many people are afraid to see a doctor to determine whether they have the disease, or to seek treatment if so. It helps make AIDS the silent killer, because people fear the social disgrace of speaking about it, or taking easily available precautions. Stigma is a chief reason why the AIDS epidemic continues to devastate societies around the world.”

Discrimination against those infected with HIV/AIDS includes both the fear of getting the disease and also negative assumptions about people who are infected.  AIDS-related stigma has had a profound effect on the epidemic’s course. The World Health Organization cites fear of stigma and discrimination as the main reason why people are reluctant to be tested, to disclose their HIV status or to take antiretroviral drugs.

Zero AIDS Related Deaths

More than 25 million people between 1981 and 2007 have died from the virus worldwide, making it one of the most destructive pandemics in history.  In the US, nearly 594,500 people with AIDS in the US have died since the epidemic began.

The goal of ‘Zero AIDS Related Deaths’ signifies an increased access to available treatments for all those infected.  Currently, only one third of the 15 million people living with HIV worldwide who are in need of life long treatment are receiving it. Universal access to antiretroviral treatments for those living with HIV will not only decrease the number of AIDS related deaths, but will increase the quality of life among those infected and decrease transmission.

Carvers Celebrates Anniversary With $15 Gift To You

It’s been 15 years since Carvers Steak & Chops opened their doors at 1535 Miamisburg-Centerville Road (Rt. 725) in Washington Township.  Originally part of a California based chain, in 2008 that company dissolved after filing bankruptcy and this location was taken private.  As an independent, the 220 seat restaurant has continued to grow their reputation, winning the “Best Steak” title on the local ActiveDayton poll in both 2010 and 2011.  Whether you’re a fan of the Ribeye, New York Strip filet or just prefer Prime Rib, Carvers is happy to serve you up a midwest aged steak, hand cut daily by Chef William Pence.  All entrees are served with your choice of French onion soup, clam chowder, spinach, chopped or caesar salad as well as a side selection of a potato dish or vegetable.  I highly recommend their au gratin potates!

To compliment their extensive beef and seafood menu, Carvers wine list includes over two hundred selections, as well as the largest selection of Single Malt Scotch’s in the Miami Valley.  The lounge has live musical entertainment every Friday and Saturday night and there is a private dining room available for groups of up to 60.

10 ?’s with Boulevard Haus Executive Chef Rae Rosbough

Some people just know early what they want to be when they grow up.  As a youngster, when Rae Rosbough’s mom encouraged her to go outside and play, she found excuses to stay inside and organize the kitchen cabinets.  She says she knew it was where she belonged.  Going to high school in Miamisburg, she couldn’t wait for her junior year so she could register for the vo-tech cooking classes.  Upon graduation she headed to Johnson & Wales to pursue her culinary education in 2000.  By 2002, degree in hand she returned to Dayton and got her first job at the now defunct Mediterra.  From there she moved to Cafe Bouelvard, then to Cena for a 1 year stint, and then back to usher in the new concept of Bouelvard Haus in the Oregon District.  This month Boulevard Haus celebrates teh beginning of their third year in business.

Chef Rae was kind enough to take on our 10 questions:

What is your favorite ingredient to cook with?

whole shallots

Shallots- I love the flavor that shallots add to almost any dish hot, cold, savory and sometimes even sweet. They add so much to a dish, without overpowering it, that it may not be a single recognizable flavor, but one that blends and enhances each dish.

What ingredient do you dread?
Fillo dough- I do not care for working with is dough because it shreds, crumbles and dries out quickly…But I love to eat it!
What’s your favorite dish to make?
Duck confit- I’ve loved this dish since the first time I tasted it at Napa Valley Grille in Providence Rhode Island back in the nineties and I’ve been perfected my technique for it ever since.
What’s your favorite pig out food?
I scream, you scream, we all scream for ice cream! Any flavor anytime.
What restaurant, other than your own do you like to dine at in the Miami Valley?
I’ve eaten at Rue Dumaine several times and have loved it! It is a comfortable environment with immaculate food and professional, friendly service. what else could you ask for?

 

What’s your best advice for home chefs?
Watch or buy the cookbook of the show America’s Test Kitchen on PBS. it is a great learning tool that takes you step by step through making delicious dishes and teaches you the science behind the techniques. I love the show and own the book. My husband, sister and brother in law, all home cooks, use it religiously as do I.
If you could invite any 4 guests to a dinner party who would they be and why?
Dinner party, who has time for that? I can’t name just 4. I’m not a very star struck person and I feel like food is a comfort and something that brings people together.

 

Who do you look up to in the industry and why?
Gordon Ramsey– I want to be a household name and a millonaire duh. He also gets to help people achieve their goals. Which is nice no matter how big of a jerk he likes to appear to be.

What do you do in the Miami Valley on a day off?

I’m a very simple person I like to hang out at home with my husband, we also enjoy hanging out in the Oregon District or during the season we love going to Dragon’s games.

It seems like all disaster stories end in a lucky break, or you just make your own luck. There are so many of them, why can’t I think of one? Refrigerators going out, no dishwasher, people not showing up for their shift, power going out in mid service. convection oven down. So, so, so many but that’s life in the restaurant biz. As for a lucky break, I think that knowing that this is what I wanted to do from a young age and pursuing that dream is a lucky break! The fact that I can get up each day and make food, and enjoy what I do  for a living, and get paid for it is an amazing feeling. There are a lot of people out there that can’t say that.

Share the Harvest Dinner to Benefit Aullwood

Greenfire Bistro in Tipp City  is hosting it’s annual buffet dinner to benefit the Aullwood Audubon Center and Farm.

The buffet will feature Aullwood Audubon Farm’s healthy meats — free range organically certified chicken and turkey and all natural, hormone-free beef . Greenfire will donate 20% of all sales, including alcohol, to support Aullwood’s education programs for children. A raffle with wonderful wines and other items will also benefit Aullwood.

The dinner will feature a Salad of Mixed Greens with marinated grilled chicken breast in a light Dijon vinaigrette; Beef with Fresh Basil and Mint Spring Rolls and Honey-Soy Dipping Sauce; Traditional Roast Turkey with Garlic-Mashed Potatoes and Gravy; fresh vegetables; cranberry relish; Roast Pork Tenderloin with Ginger-Plum Crust finished with a Hoisin-Mirin sSuce and served with lightly stir-fried wild mushrooms; Cider Poached Pears and Buttermilk Cake topped with Vanilla Crème Fraiche.*

Preview Night for Dayton’s Newest Coffee Shop!

Ghostlight Coffee, Dayton’s newest independent coffeehouse will be offering an opportunity to preview the coffeehouse, the espresso, coffee & tea menus, and the delicious Thistle Confections artisan baked goods. The Preview night is scheduled for Wed, Nov 9th from 7-8:30pm.

ACT I – Espresso beverage of your choice, paired with Dark Chocolate & Salted Caramel Layer Cake with Fudge Buttercream

ACT II – Pour-Over Coffee Bar selection paired with a Pumpkin & Spiced Latte Whoopie Pie

ACT III – Rishi Tea Selection or Rishi Masala Chai Latte paired with Masala Chai Cupcake with Vanilla Bean Swiss Meringue

Toxic Brew Company Needs Letters of Support For Zoning Variance to Open in Oregon District

Local entrepreneurs Shane Juhl and Jason Hindson are working hard to rehab an old building at 431 E. 5th Street in the Oregon District in hopes of opening a Brewpub.  There goal is for Toxic Brew Company to  “celebrate the craft brewers of the area and try to have an eclectic mix of craft beer drawing inspiration from multiple places including Dayton history, American craft breweries, and European traditions.” according to Brewmaster Juhl.  But before they can even think about promoting the beer,  they are trying to work their way through the many obstacles that seem to face so many new businesses in this town- zoning.

If you’d like to see the first Brewpub in Dayton since the prohibition era, help make their dream come true by writing a letter of support to get variances for 18 parking spots, off-street loading/unloading area and to allow their hours of operation to go beyond 11pm.  You can email letters to [email protected] and copy [email protected] who is the staff contact at Zoning Appeals.

You may remember that  Kimberly Collett, owner of Olive- an urban dive and Shane Anderson of the soon to be open Ghostlight Coffee also had to appeal to the public to help obtain the necessary variances to get their businesses past similar hurdles.  So if that’s what the city needs us to do  to help get more locally owned business, let’s help them!

I for one can’t wait to try more of Toxic Brews!  I still have a craving for more of their pepper beer I got to try at the Big Beer and Barley Wines event last month!

Dayton restuarnt declares Duck-A-Palooza Week!!

Chef Candice Rinke (read  more about her here in our 10 questions interview) of The Hawthorn Grill in Kettering loves autumn and duck so she has declared this week “> Duck-a-palooza” and she’ll be featuring duck in four different autumnal specials all week starting tonight!  The restaurant, located at 1222 East Stroop Road is open nightly at 5pm and serves til 9pm during the week and 10pm on Friday and Saturday.

Yuengling Comes To Dayton Bars First, Stores Later

Many Dayton beer lovers have had Oct 31st circled on their calendar as the day Yuengling debuts in Dayton.  The billboards and bus signs have been hyping the arrival for months.  And for draught lovers, many local bars and restaurants will be  treating folks to a glass of beer on Mon, Oct 31st.  But there is a trick to the debut as well, according to Kathryn Oakes, Director of Marketing for Heidelberg Distributing, the demand has been far bigger than we expected.  We’ll have enough kegs on hand to service our market, but the retail packages will be delayed until Nov. 14th.”

“I thought that this launch was going to make history for Yuengling and set the standard for future state launches, and Ohioans are going to make that happen,” said Patrick Noone, the brewery business development manager overseeing the move into Ohio. “It’s crazy. I’ve never seen anything like this.”

The family-owned brewery, which promotes itself as “America’s Oldest Brewery,” is based in Pottsville, Pa. Despite being in a neighboring state, Yuengling had never sold its brands in Ohio, blaming the reason on a lack of production.

Yuengling recently expanded one of its breweries to make the push into Ohio.

The beer has a major cult-like following, and there are plenty of stories about Ohioans making special trips to Pennsylvania to stock up. Its arrival has elicited comparisons to Coors, which for years wasn’t sold on the East Coast.

Rob VanMetre, the local Yuengling brand manager, shared with us that the Lager, Light Lager and Black & Tan ( a mixture of Yuengling Premium Beer and Dark-Brewed Porter) will be available at the roll out.  Other Yuengling brands, such as Porter and Lord Chesterfield Ale, are expected to arrive sometime next year.

He goes on share that “Yuengling is a fantastic beer with a great following and moving the release date back for retail and convenience stores is really so we can service all our customers and be fair.”

Many local bars will be opening early to host special tasting parties.  The Dublin Pub is opening at 5:30am to our $3 pints to Yuengling fans. Stop in for kegs and eggs and get a great start to your week!  Archer’s Tavern in Centerville will open up at 6am and TJ Chumps is promoting $2.50 22oz Yuenglings the entire month of November.

Is Your Chili Worth $500?

On Sat, Oct 22,  the Kroc Center is hosting a Chili Cook Off from 10am – 2pm.  Prizes will be awarded for the top 3 chili cooks, as well as a people’s choice and best decorated booth.  First place wins $500, 2nd will win $200 and 3rd place is $100.  Entrants must apply with a $25 booth fee by Oct 14th.  There are 12 spots available and all chili must be prepared and cooked on site.  Participants must prepare at least 2 gallons of chili for judging and public tasting.   Chili must contain 95% lean ground beef. Guest are invited to stroll the Kroc campus, sample chili and enjoy live music and their will be a costume contest and inflatables for the kids.  The Ohio Beef Council will be on hand doing live food demos and there will  even be a pumpkin patch.  $5 admission. The Kroc Center is located at 1000 N. Keowee Street, however the parking lot entrance is off Webster Street.

Zig Zag Gallery To Host Soup Fundraiser

Kim Megginson and her partner Brad Abbey at the Centerville gift shop are both potters, so it’s no surprise that they are celebrating American Craft Week.  As a part of the festivities, they will host their annual Soup for CERF fundraiser.  On Thurs Oct 6th and Fri Oct 7th from 5 – 8pm the Cross Pointe Gallery will be serving up soup.  The annual benefit for the Craft Emergency Relief Fund is part of a 15 year national relief effort that supports professional crafters when personal or natural disasters strike

Zig Zag Gallery will have a selection of pottery bowls donated by both local and national potters. Guests will choose their bowl  and fill it with a soup dinner provided byFlavors Eatery, Meadowlark Restaurant, Ashley’s Pastry Shop, Dorothy Lane Market and more!

For a $10 donation guests go home with a bowl and ZIG ZAG sends the money to the national fund that helps artists through direct financial and educational assistance to crafters,  including emergency relief assistance, business development support, and resources and referrals on topics such as health, safety, and insurance.

Of course while you’re there, you might want to check out the displays by local artists, shop the unique gift selections or pick up the latest charms for your Pandora bracelet.
