Chef Maria Launches Underground Supper Club

Chef Maria Walusis is  ready to launch the “Underground Supper Club by Watermark” – multi-course wine dinners that will be offered several times a year, and hosted in the wonderful homes of some of our favorite friends!

These intimate gatherings will be a small group of 12 or 14 guests, and will be specially-themed by Chef Maria – with plenty of time to interact, ask questions, and socialize!

The dates for the first dinner are:

Saturday – September 28 – 6pm
Sunday – September 29 – 6pm

The September 2024 menu is inspired by The Maisonette. Chef Maria was inspired by the lovely display of the facade and entry of this iconic restaurant, which can be visited at the American Sign Museum in Cincinnati!

APPETIZERS (during cocktail hour):

Salmon rillettes on crostini; and Brie en Croute with jam and chopped walnuts

With a choice of our feature cocktail (created by Eric the Barman); prosecco; white or red wine

SALAD COURSE :

Endive-blue cheese-apple-walnuts-  champagne  vinaigrette
Wine: 2022 Alfred Graf Riesling Spatlese, Mosel

FIRST COURSE:

Chilled omelet  crepe filled with shrimp and bay scallops served  with champagne sauce
Wine: 2022 Gabriel Chevalier Bourgogne Blanc, Burgundy

MAIN COURSE:

Beef Wellington; mushroom duxelles & puff pastry with fondant potatoes, caramelized shallots in red wine jus, haricot vert with shallot & herbed butter
Wine: 2018 Chateau Le Bourdieu, Cotes de Bourg

DESSERT:

Profiteroles filled with chocolate mousse; boozy cherry syrup, fresh berries
Served with boozy Café Brulot

This dinner will be all-inclusive, and will be an intimate affair, with a maximum of 14 guests!  Plenty of time to socialize with friends as well as connect with Chef Maria!

Panda Express Launches Blazing Bourbon Chicken

Panda’s new chicken dish featured crispy boneless chicken bites and wok-tossed veggies in a sweet bourbon sauce mixed with the signature Hot Ones Last Dab Apollo hot sauce.

Panda Express has partnered with Hot Ones on a new dish that launched nationwide for a limited time on Sept. 4. 2024. (Panda Express)

“Blazing Bourbon Chicken is Panda’s spiciest dish on their menu and made with a crispy chicken coating to create an addictive, comforting flavor in every bite,” Panda Express says.

Last year, during the limited run in select markets, Panda Express said consumers had been clamoring for more “complex, innovative and adventurous flavors,” which led to the partnership with Hot Ones.

The menu item is available in participating stores across the country now for a limited time.

Italian Fall Festa Kicks Off Friday With Carry Out Lunch

𝐎𝐫𝐝𝐞𝐫 𝐒𝐨𝐧𝐬 𝐨𝐟 𝐈𝐭𝐚𝐥𝐲 – 𝐃𝐚𝐲𝐭𝐨𝐧/𝐉𝐨𝐡𝐧 𝐏𝐢𝐫𝐞𝐥𝐥𝐢 𝐋𝐨𝐝𝐠𝐞 #𝟏𝟔𝟑𝟑 kicks off  their 47th annual Fall Festa by offering lunch to go this Friday with pick up from 11am – 1pm.

The actual Festa kicks off Friday night at 6pm runs through Sunday at 8pm. It’s a weekend full of  Italian music, delicious Italian food, good friends, and a fun game of Bocce on the beautiful, spacious, shaded grounds of Bella Villa! Members of the club having been preparing food  and are ready to share their homemade goodies with you.  You’ll find pizza, Italian beef, muffuletta sandwiched, calzones, meatball sandwiches, Caprese and pasta salads, Italian cookies, tiramisu and cannoli’s all for sale.  On Sunday, the football games will be shown on big screen tv’s near the beer garden.

The Meatball Madness 5K run happens at 10am on Sunday.

Festa Parking is located at Reynolds & Reynolds parking lot at the corner of Research Blvd and County Line Road. Parking and shuttle service to and from the grounds is FREE of CHARGE! Only Handicap Parking is available on the grounds and must have appropriate identification.

Soft Opening for Culina in the Oregon District

Wednesday (today) at 4pm Culina will soft open with the new concept while protecting the favorites we have all grown to know and love from the former Roost at 524 E 5th Street, in the Oregon District.

When life gives us lemons – some people make lemonade but Chef Dana Downs makes Limoncello!

Culina unveiled a menu that features everything from $7 snacks to a $23 striped sea bass. The menu that contains things like Truffle Fries, Stuffed Olives – Salads like the Gorgonzola Wedge (that Roost was known for), or a Grilled Romaine Caesar – Shared Plates  of Mussels (another Roost favorite), Grilled and Roasted Artichokes, Chicken Scallopine, New York Strip with Salsa Rosa (remember the bread dip from Roost), and Sweets like a Lemon Ricotta Cookie or even a Biscoff Gelato Affogato.

The cocktail menu has been updated with features like a Catamaran, Paradisi, Spice Spice Baby, La Sera Spritz or the Golden Hour – all of these might require a taste!

Soft opening hours are 4-9pm today; 4-10 Friday and Saturday – closed Sunday.
Next week – Monday thru Thursday 4-9 Friday and Saturday 4-10. More on hours coming!

Quest for the Best Baby Back Ribs in the Miami Valley

Today is Baby Back Ribs day and I love a good bbq’d rib.

Baby back ribs are taken from the upper part of the ribcage, near the spine, and are smaller, leaner, and more tender than the St Louis cut. They cook faster and are often considered more delicate. Both styles offer unique tastes and textures suited to different BBQ styles. Not to be confused with St. Louis cut ribs. The St. Louis cut come from the lower portion of the pig’s ribcage, specifically the spare ribs, which are trimmed to remove the breastbone and cartilage, resulting in a flatter, meatier cut. They tend to have more fat and connective tissue, making them rich and flavorful as well, but require a longer cook time.

I tend toward the St. Louis cut which is most common in Memphis, St. Louis and Kansas City bbq, on occasion I get a hankering for a shorter meatier rib and that is the Baby back.
Locally I find the great baby back ribs here:

Bullwinkle’s Top Hat Bistro in Downtown Miamisburg. These are always fall of the bone tender and accompanied by great sides. With a full slab and sides for under $30 its hard to beat and you’ve got leftovers for lunch the next day.
KD’s BBQ in Kettering call their ribs Back Loin Ribs, just another way of saying Baby Backs. While normally I’d have a cabbage roll, I will change course for these ribs. Like Bullwinkles the sides shine bright and compliment the saucy smoked ribs perfectly.
Buckhorn Tavern is not a place I hardly ever get to, but friends tell me this is the spot to add to my list. Known for steaks and chops, their slabs of Baby Backs are a best seller. Great beer list, cozy room, and fall of the bone ribs make for a great evening.

Christopher’s Restaurant to Close To Concentrate on Catering

“We are permanently closing the restaurant after Saturday, September 7th  service. We have decided to spend all of our time and energy building our Catering Business and Venue Rentals. Please take a couple minutes to read our formal announcement. Thank you all for your love and support. It has been an incredible adventure. We love you and appreciate all of you and hope to see you again soon at one of our upcoming events.”
They continue to explain that it is best for them to focus their treasures and talents on growing their catering business and further develop their venue rentals.  They say this will offer community building nights at the 4211 Linden property  with family dining dessert/ice cream socials, wine tastings, and also ramping up their Friday night buffets at The GEM by Christopher’s on Valley Pike.
The Catering House by Christopher’s on Linden will be available for private party rental, fundraisers and corporate meetings.

Archers Tavern Wins at National Buffalo Wing Festival

Archers Tavern spent the weekend in Buffalo, New York competing for the third time at the 23rd annual National Buffalo Wing Festival, that has been taking place for over 20 years. Since its founding in 2002, Wingfest has evolved into one of the country’s top food festivals, drawing more than 1 million attendees from all 50 states, 41 different counties and every continent (even Antarctica). The festival helped establish Buffalo as the World Capital of Wings and gave the city a reason to celebrate its signature food like it never had before.
In their first year competing Archers placed in all 3 divisions they entered and finished 3rd overall. Here were their award winning sauces:

2nd place in Best Traditional Medium Wing Sexy Style – A combination of Archer’s style, Dry Rub and another special spice combination developed over the years by team members.

3rd place in Best Creative Spicy Wing  Polly-Q – A spicy Polynesian-inspired BBQ sauce.

3rd place in Best Creative Spicy Wing Wing and a Prayer – The tavern’s hottest sauce featuring fresh habanero peppers.

This year 19 restaurants were invited to compete and locally owned Archer’s Tavern got the invite for the 3rd year.  Each restaurant can submit sauces in 3 categories.  For 2024 Archers walked away with two trophies.

This time we’re doing my personal favorite steak, bone-in ribeye! It’s making me hungry just typing bone-in ribeye! Ha! A large part of my chef background was spent in fine dining steakhouses for years. It’s nice when I can apply that learned experience and share it in a different setting like this! It’s pretty cool to offer something that you would have to go to a super upscale restaurant in a more casual vibrant fun setting! It makes everything feel extra special! The high end craft and care, anywhere! I love it! Emily and the other managers will be sharing more information leading up to the event. Five Guys Introduces Patty Melt

Five Guys is excited to announce a new official menu item inspired by a popular menu hack. The Patty Melt, which combines a grilled cheese, juicy patty and the toppings of your choice, will officially join the menu at select Five Guys locations starting September 1, 2024.

Known for its customizable burgers and fresh-cut fries, Five Guys allows customers to enjoy unlimited flavor combinations. The Patty Melt evolved from customer requests and offers a delicious new way to enjoy the classic Five Guys taste.

“We’re thrilled to bring the Patty Melt to our menu at test locations,” said Jerry Murrell, Chief Executive Officer and Co-Founder. “Our customers are integral to the Five Guys story. We hope that the addition of the Patty Melt to the menu makes them feel like part of the Five Guys family, too.”

The Patty Melt will be officially available on the menu at 194 Five Guys locations. However, customers can still order a Patty Melt at any location nationwide. It has always been an option through customizations, but now ordering is easier for customers.  Before this test, it was known as a grilled cheese and add a patty, but now all stores know the name.

Bites in the Heights

The City of Huber Heights proudly presents the sixth annual Bites In The Heights Food Truck event at Rose Music Center on Saturday, August 24 from 11:30am to 8:00pm. The event will feature Dayton Food Trucks dishing out a variety of delicacies, children’s activities, a cruise-in car show, and a movie screening of The Wizard of Oz starting at 8:15pm! Admission to the event is FREE!

19 local food trucks serve specialty dishes and tasty treats from 11:30am to 8:00pm outside the main gate. Make sure to visit the face painter to get some custom painted art while a DJ spins music throughout the day.

Where To Get A Cuban Sandwich in the Miami Valley

National Cuban Sandwich Day is a tribute to flavor found in a toasted pressed sandwich. It’s no secret that the birthplace of the Cuban sandwich — as the name suggests — is from the largest island nation of the Caribbean. The sandwich is mostly characterized by its delectable blend of ham, cheese, pork, and mustard and is also know as a Cubano.

The Pork is seasoned perfectly with spices I can only describe as uniquely Cuban. Oregano, cumin, parsley, black pepper, all together smells of a Cuban country kitchen. They layer the pork alongside pickle, mustard, and swiss. Finished in a press, the roll comes back with a crunchy exterior ready to handle the juicy pork. Order it with a side of black beans. Sit on the patio, enjoy the sunshine, imagine you are in a Havana cafe all for under $10.00.

Jim Chrissis says Charlie’s Deli makes one that is decent. Get him to customize it as you like it (I asked for a little salami and some mayo on mine, to approximate the Tampa style) and they will accommodate. He will press it as well.

We’ve also heard that Harens Market in Troy, The Cheesecake Factory, Dayton Street Eats and sometimes Chappas in  Moraine also have good Cubans.  If you’ve found one we don’t know about, please leave us a comment below.

Centerville’s Thai Village Hosts Soft Opening

Those of us who are big fans of Thai Table on Far Hills in Centerville should be happy that the former owner there, Sue Whitted, has decided to continue to grow her presence in the Thai food scene! She also owns Thai Kitchen at 2335 Miamisburg-Centerville Road in Miami Twp and  Hello Thai at 3301 Dayton Xenia Road in Beavercreek. Thai Village at Cornerstone is quickly filling the space left behind by Core Life Eatery. Trust me, this is an upgrade.

I was able to attend the soft “soft” opening this week and we were welcomed into a refreshed space staffed by smiling faces. Our party decided to divide and conquer. We started with the wings and soft rolls for the appetizer round. The wings came out first and they were a knockout. They were cooked perfect, not very crispy, but tender and juicy under the sweet and sour glaze.
Second up were the soft rolls full of fresh veggies and shrimp. The peanut sauce is as expected.
For our entrees we ordered the shrimp pad thai at the mild spice level, the beef pho at a medium level and the Tiger Roll (tempura shrimp and tuna) was the visual star of the show.
We caught a peek of the cheese rangoon and they were huge and crispy, the folks who ordered that looked happy from our vantage point.
The pad thai was full of flavor and shrimp! They didn’t cut corners on the veggies, garnish or peanuts. We all three tried it and the heat was on point for mild as ordered. The pho was big, full of flavor, packed full of tender beef, and the accompanying sprouts, herbs and peppers were fresh. We did miss having hot sauce, fish sauce, lime wedge or hoisan on the table. But the cilantro, sprouts and peppers added that fresh punch you always want. We chalked up the lack of sauce and lime to opening night hiccups. The pho came out at medium heat and caught our throat appropriately.
Finally, the Tiger Roll. Gorgeous, full of shrimp and veggies, and just perfectly presented. The spot has a dedicated space for the rolls and I’ll be back to explore more of their custom creations.
This week they are open for continued soft opening as they work out final menu details and put on the finishing touches to the dining room. Give them a follow on Facebook to keep up with their progress as the move toward a full opening after Labor Day.
