Anna Borchers may be new to Dayton, Ohio, but she is an old pro at baking.  Our Food Adventure Crew is excited to introduce you to the owner of Maui Mae’s Bakery and tell Anna’s story.

Have you ever tasted paradise? Look no further.  We are in love with her chocolates, pralines and macadamia nuts.  If you like to give locally made gifts, she might have just what you are looking for this holiday season.  Get ready to learn about one of the “up and coming” businesses in the Miami Valley.

—Maui Mae’s began in, as you would guess, in Maui, Hawaii in 2011.   Anna had her first child and realized she didn’t want to go back to work.  From there, a business was born.

—Anna comes from a family of natural cooks.  Her mother made everything from scratch and was an excellent baker. Baking runs in this family! Not only Anna’s mother, but her great grandmother on her father’s side (whose name was Mae) and all three of her great grandmother’s daughters were great bakers as well.  Of course Anna’s children already like to bake with her and be official taste testers.  Her husband is a Dayton native and Chaminade Julienne graduate.  It is definitely a family business.

— When Maui Mae’s was in Hawaii, the baking first started in a friend’s restaurant at night while the restaurant was closed. Anna made cookies, breads, torts, brownies and much more.   Now in Dayton, she focuses on Hawaiian pralines, raw coconut chocolates (they melt in your fingers and are so amazing) along with Hawaiian grown macadamia nuts.

— The company logo is Anna’s daughter, hula dancing.

—If you want to meet Anna Borchers in person, come check out one of the many events she sells at. She will be at the Night Market on December 16th.  This market is held at the Yellow Cab Building at 700 E. 4th street from 5pm-10pm.   The Night Market features free entry, lots of local vendors and local beer on tap.

—You can also catch her at the Oakwood Farmers Market holiday event on December 11th from 11am-5pm at 1947 Far Hills Ave.

—Throughout the year she frequents the 3rd on 3rd, and The Grandview Farmers Market. She also does the Cyclops Festival in Yellow Springs, Dayton Most Metro’s Sweet Treats Festival, and the Chocolate Festival.  She is a busy lady!

For almost forty years, Sammy Hagar has been one of rock music’s most dynamic and prolific artists. From breaking into the industry with the seminal hard rock band Montrose, to his multiplatinum solo career to his ride as the front man of Van Halen, the “Red Rocker” has set the tone for some of the greatest rock anthems ever written with songs like “I Can’t Drive 55,” “Right Now,” and “Why Can’t This Be Love.”  He’s earned the highest respect of the music industry with a Grammy Award and induction into the Rock and Roll Hall of Fame alongside Van Halen and is currently on his fourth platinum run with the super group Chickenfoot. Along his journey, Hagar has also become a dedicated philanthropist, a New York Times best-selling author and auspicious entrepreneur.

Hagar first burst onto the scene in San Francisco as the lead singer of Montrose. Following a string of eight solo albums culminating in several platinum efforts and hundreds of sold out concert appearances across the country, Hagar joined Van Halen in 1985 and took the band to unprecedented heights, including four consecutive No.1 albums before the band broke up in the mid-nineties.  He later returned to Van Halen to lead a triumphant 2004 reunion tour.

Aside from making his mark as a hit songwriter and lead vocalist, Hagar has played with a succession of legendary guitar players; from Ronnie Montrose and Neal Schon to Eddie Van Halen and Joe Satriani and his current group, The Circle, which also features former Van Halen bassist Michael Anthony, Jason Bonham and Vic Johnson.

Powerhouse English DJs Stanton Warriors Coming to Masque

The concert is a part of their “One and One” tour, and will also feature California based DJ Worthy as well as local and regional talent.

Since bursting onto the scene with their multi award-winning compilation “The Stanton Sessions” back in 2001, the England based Stanton Warriors’ irresistible and inimitable sound has consistently remained the soundtrack to some of the world’s biggest and best parties over the past thirteen years; from East London warehouses, Miami boat parties and illegal Detroit raves, to the stages of Coachella, Glastonbury, Burning Man and Ultra Music Festival, selling out global tours and topping DJ lists along the way.

Louisville, KY DJ Infected Mushroom brings a strong aura of creativity to every single one of his DJ sets. His mixture of gorgeous vocal trance and emotional bass music has gained him strong credibility throughout Kentucky and southern Ohio. He has had the opportunity to perform with the likes of humungous acts like Zeds Dead, Manic Focus, DJ ICEY, and Steve Aoki.

Rounding out the lineup is a DJ and promoter that has been extremely influential to the Dayton electronic scene for the last seven years. John Chapel’s weekly “EDM Tuesday” is one of Ohio’s longest running electronic nights. The weekly has also been the launch pad for many area DJ’s. His eclectic and exciting breaks sound keeps dancers moving from early in the evening to late at night.

Your hometown potato chip company has done it again.   Oh, how we love Mikesell’s Snacks for any occasion.  And now, they bring us a couple of new, terrific products that quite honestly are surprisingly good.

The Food Adventures Crew have been enjoying Mikesell’s brand snacks for as long as we can remember, especially Chef House and The Big Ragu.  Even our New York girl, Hungry Jax and her family have been crunching away on her decade in Dayton on those groovy chips.  We have been on tours of the plant. We have been lucky enough to be behind the scenes, at test taste meetings, and met the workers that make the magic possible.

As we end 2016, Luke Mapp, VP of Marketing and his staff have come up with two winners.  Seriously.. you gotta try these.  The new flavors are “NACHO CHEESE TORTILLA CHIPS” AND “TANGY CHIPOTLE BBQ KETTLE COOKED POTATO CHIPS.”  They are 2 more reasons to reach for your local brand, when in the potato chip aisle.

HERE’S THE SKINNY ON MIKESELL’S TWO NEW “MUST EAT” FLAVORS:

— NACHO CHEESE FLAVORED TORTILLA CHIPS:  Ok, so this is Mikesell’s jab at the Nacho Cheese Dorito brand.  The flavor is very close to Nacho Cheese Doritos, except a tad milder.  It is a nice, easy snack.  Nice, lightly flavored and definitely cheesey.  One of the big improvements over other Nacho Cheese flavored tortilla products, is this chip is more sturdy.  It holds up way better in french onion dip, queso and salsa than other brands.  So, now you know, it is a strong hometown tortilla chip.  You won’t have to go hunting

for half of your chip in the dip on this one.  If you love Nacho Cheese Tortilla Chips and love dipping,  this is the chip for you, hands down.

 

— TANGY CHIPOTLE BBQ KETTLE COOKED POTATO CHIPS:  Wow, what a great flavor!  You get the patented Mikesell’s Kettle cooked crunch, and the sturdiness of a dipping chip that wont break either (we just talked about this didn’t we?).  Maybe we are tortilla happy today, but this flavoring is faintly reminiscent of the old Taco Flavor of Doritos from the 70’s/80’s.  It has that spin for sure.  We are sure you are going to love this new flavor.  In a world where people are trying to put biscuit and gravy flavor into chips, this is a refreshing innovation that actually works.  It fits.  The Tangy Chipotle BBQ flavor is great, and not a novelty.

*** HONORABLE MENTION:  Back in March, Mikesell’s released another amazing treat that quickly became one of our faves.  Salted Caramel Puffcorn Delites has been out for less than a year, and they are incredibly delicious and addicting.  If you have not tried these yet, you won’t believe how good they taste.

The Dayton Ballet’s holiday performance of The Nutcracker has become a beloved family holiday tradition. This year’s event moves to the Dayton Woman’s Club, a beautiful setting that provides tea service, petit fours, mini sandwiches and other yummy delights. Children will have an opportunity for photos with the Sugar Plum Fairy and Nutcracker, learn dance steps, color, and hear the story of The Nutcracker before the performance. It’s a memorable experience for all!

This is a one-time only event this year, held on Sunday December 18th from 12:30pm – 2pm, before the matinee Nutcracker performance that starts at 2:30pm. Tickets to the Tea are $15 for children and adults and can be purchased here or by calling Ticket Center Stage at 937-228-3630.

(Not A) Dive Bar Tuesday: The Dark Horse Tavern

Welcome to the Dark Horse Tavern!

In 1831, Benjamin Disraeli wrote the book The Young Duke. It is a book about a young orphan who comes into a vast sum of money and starts to squander it before the love of a woman shows him the error of his ways. During his party days, he spent a good deal of time at the track, betting on the horses as he drank and wooed the ladies. There was some excitement at the track that day; “a dark horse which had never been thought of, and which the careless St. James had never even observed in the list, rushed past the grandstand in sweeping triumph.” Disraeli penned the first written usage in history of the term “dark horse” to describe a victory that comes from an unexpected place. The book became a bestseller, and the phrase entered the English language. Daytonians don’t think of obscure British literature when a friend mentions a dark horse. They reflect on some of the best barbecue in the city, well-prices drinks, and an experience that they thought they had lost three months ago.

The Dark Horse Tavern (209 Byers Rd, Miamisburg, OH 45342) closed abruptly at the end of July when owner Dennis Williams discovered the difficulty of operating a thriving bar and a construction company. Something gave, and unfortunately for their loyal patrons it was the Dark Horse. However, people saw the potential of a favorite bar and restaurant in its just-off-the-beaten-path location. Nikky Vontz was an employee there many years back, in the heyday of the restaurant. She knew that with the right people in place, it could get back to those glory days. In the three months they were closed, she negotiated with Mr. Williams to get the Horse up and running again. Her persistence paid off; on November 19th, the Dark Horse Tavern was back and ready for business!

Dark Horse Tavern Restaurant Patrons who were familiar with the previous incarnation of the space would not notice anything was amiss. The upstairs was clean and ready for patrons, and there were few cosmetic changes to the bar or restaurant area. The big smoker in the back was getting the meat ready as quickly as people were ordering it, covering a menu that is “tailored after the forerunners in the cowboy cooking method.” That method provides a little something for everyone, from fantastic sandwiches to plates covered in hickory smoked deliciousness and smothered with sauce. They have lighter fare if you are looking for a good piece of fish or a light salad for the evening, and a kids menu for the younguns. From what we tried, and heard from others, the food was fantastic. We heard that even some visiting Texans were impressed by the brisket and ribs the Dark Horse was serving. That says something about what you are about to experience when you eat here.

The drinks are where you may start seeing some differences. The whole staff here is new, and that is the way Nikky Vontz wants it. As the general manager, she is responsible for the smooth running of every aspect of the restaurant. She wanted a clean slate to work from, and she has it. Nikky is making sure that the cocktails, beers, and wines that flow from her staff are appropriately portioned and not too stressful on the wallet. The talent she is working with has hit the ground running. The bottles behind the bar are neatly lined up and ready for efficiency, and she is going to be running specials over the next few months to introduce us to the new menu. The first specialty: The Bad Lands, their house margarita. There are six taps and a wide bottle selection that will appeal to every palate, from Bud Light to local craft IPAs and stouts. The taps will constantly be rotating with the seasons and the tastes of the patrons.

Moving forward, Ms. Vontz has big plans. She is currently booking bands for spring of 2017, and the spots are starting to fill up. Karaoke has come back to Tuesday night, and trivia will be returning on Wednesday nights. Ladies’ Night will occupy the Thursday night slot and some low-key musical acts on Friday nights. Large groups (up to fifty people) can use the upstairs space, complete with your bar and a food selection that you create from their menu. If you can’t make it to the tavern for the food, have the tavern bring it to you! They will cater off-site events. Ms. Vontz is looking forward to the Dark Horse Tavern offering their room for charity events, with one or two in 2017 that she already has in the works. The new management gives new life for this Dayton staple, and they are going to make the most of it.

When a restaurant closes that abruptly, it is a long shot that it will reopen. The new blood running the bar and ownership took that shot, and are going to work hard to make sure they are successful. The Dark Horse Tavern is open for business again. Everything has changed there, but nothing changed. Welcome back to the Dayton restaurant scene Dark Horse Tavern!

900 Bottles of Beer

15369005_10153949409131906_5489572039323029409_oThe first Wednesday of each month Mike Schwartz from Belmont Party Supply picks 9 beers for folks to sample and then teaches beer school at Trolley Stop in the Oregon District.   Novice or expert, there’s always something to learn about the beer, the hops used, the barrels used for aging or some other aspect in the process that affects the flavor of the liquid.

And this Wednesday, December 7th at 7pm will be  Beer Tasting #100 and that’s a big reason to celebrate! That means 900 beers have been tasted and rated by the crowd’s that show up for this monthly event.

If you want to be at #100 plan on arriving early, these do sell out on a regular basis.  We even hear there will be free t-shirts for the first 25 in attendance.  Cost for the tasting is $25 and includes light snacks.

Top Shelf Veggies-Lucky’s Taproom and Eatery Grows Their Own

long-shot-of-interiorDrew Trick is a man passionate about tomatoes–very passionate. He loves fresh tomatoes so much that he has installed a rooftop urban greenhouse to grow his own tomatoes and serve them year round at his bar and restaurant, Lucky’s Taproom and Eatery.

The greenhouse project started in 2014, after Trick had successfully experimented with small-scale rooftop gardening. After nearly two years of construction, crews completed the greenhouse late this summer. Now, Trick is poised to start serving the first of his homegrown tomatoes within the next few weeks.

Yet, tomatoes aren’t the only things growing in the Lucky’s greenhouse. Trick uses twelve Tower Garden® structures to grow 336 plants, including tomatoes, eggplant, Swiss chard, spicy mixed greens, romaine lettuce, and red and green cabbage. The towers allow for vertical growth and a minimal footprint. Larger, sprawling plants like tomatoes are planted at the tower’s base, while the remaining pods are filled with lettuces and other greens. The hydroponic towers grow produce in small soil-less pods of rockwool, a man-made growth medium comprised of basalt rock and chalk. The rockwool holds the plants in place while the roots grow into the base of the tower, suspended in air. A submerged pump and layers of slotted flooring in the tower deliver water and nutrients, which come from an organic worm emulsion fertilizer, to the roots at regular intervals.

Like the setup it contains, the greenhouse structure itself is impressive. Trick worked with The Architectural Group (TAG), a Dayton-based firm, and Joe Ruzinsky, a local contractor known as the Old House Guy, to build out the roof in a way that blended seamlessly with the Oregon District’s historical standards but that also provided state-of-the-art technology to automate the greenhouse. The crew built up walls between the front and back offices, where empty roof space once stood, with windows recovered by Dayton Reclamation and Restoration, LLC. The new greenhouse roof was custom built by NEXUS Greenhouse Systems and fits snuggly across the top. Gazing up at the greenhouse from the parking lot, patrons can get a glimpse of the built-in weather station that serves as the control-panelsgreenhouse’s central nervous system.

The weather station tracks heat, humidity, and wind speed, and, with a built in radar system, can preemptively control the greenhouse to adjust for changing weather conditions. Too hot or too cold? The system adjusts the top vents to let air in or out, and kicks fans or the heater on. Too much direct sun or threat of frost? A shade extends the length of the greenhouse to cover the plants underneath. Storm approaching? The system battens down the hatches to protect the crops.

 

“It is the Cadillac,” Trick jokes when explaining about the roof. “Everything can be programmed, how much heat, how much humidity, how much wind the structure can take.” This automated system frees Trick from worrying too much about making the adjustments the plants need—Trick estimates that he only spends a couple of hours, three to four times a week in the greenhouse.

By Trick’s own admission, the greenhouse is a pet project for him. “I never thought I’d do this,” he notes. “But it actually gives me a lot of satisfaction to watch stuff grow.”

 

And grow it does. The greenhouse set-up allows for a staggering amount of produce in very little space. Trick’s earlier attempts at rooftop gardening used half of the towers and, at its peak, supplied about 100 lbs. of fresh tomatoes weekly. In his greenhouse set-up, Trick has doubled the number of towers and, because of the greenhouse climate control, can grow tomatoes year round. However, the greenhouse is unlikely to replace the need for additional produce supply. That was never the point. Trick hopes to supplement the purchased greens and veggies with those he grows, targeting the greenhouse crops for areas where their impact will be noticed the most. With a smile, he tells a story of the plants on the rooftop before the greenhouse was built: “One of the servers told my customer, ‘I’m sorry, we’re out of tomatoes, but let me go to the roof and grab one for you.’ They were like, what are they talking about? You see customers walk tomatoes-ready-to-fruitout, they’d look up, and the server would [hold up a tomato and] say, “Here you go.”

 

Lucky’s has already started rotating in the mixed greens and the lettuce into their specials and will be using the tomatoes to top sandwiches soon. The restaurant currently uses 150 to 200 lbs. of tomatoes a week, so when Trick’s plants start producing, he’s planning to rotate them in in stages. “The stages will be sandwiches, the pico, then you’re getting into the sauces,” Trick explains. “And then hopefully we’ll still have enough of our tomatoes to go in the sauce to actually get that flavor out of it.”

 

And that’s really the point of the whole endeavor—not to grow tomatoes more cheaply or even to recoup the costs of the greensgreenhouse, but rather, to provide the best sandwiches and other menu items that he can. “I’m not going to tax on [the greenhouse]. It’s just trying to provide a better product,” Trick explains. “I want fresh tomatoes. For the customers, I want fresh tomatoes and I want good greens. You get three months of year where we get good tomatoes and everything else is just a red colored fruit with not much flavor. If my goal is to have fresh tomatoes throughout the year, we’ll have the best-dressed sandwiches. It makes a world of difference.”
