Kettering TJ Chumps Sets Opening Date!

TJ Chumps will open their fifth location on Stroop Road in Kettering on Tuesday, August 8th.  The spot  formerly housed Hawthorn Grill, which closed in 2007.  Chumps has done a $300,000 update to the space, which will be the smallest in the chain, seating about eighty guests, with carry out and delivery available.


Partner Mike Leigh says, “we see it as an excellent opportunity to test an exciting new market. It will have the same great food and service as our other four locations just with a smaller footprint.”

The first TJ Chumps opened in 2002 in Miamisburg, followed by the Englewood location, then Fairborn and most recently Huber Heights in 2014. They’ve established themselves as a family friendly sports bar and pub, featuring burgers, wings, pizza, soups and salads. Their gluten-free offerings include salmon, ribs and pork chops.

10 ?’s with Chef Patrick Thompson of redBerry

The husband and wife team of Mykie and Patrick Thompson are celebrating the third anniversary of their breakfast and lunch bistro in Troy. When creating the concept, their vision was to create an atmosphere that would relaxed and comfortable. redBERRY would serve the classics with all the taste and no fuss. There’d be breakfast populars like biscuits and gravy and French toast, and lunch favorites like BLTs and hearty soups.
They’ve certainly succeeded in bringing this vision to life.  There are often lines of folks outside of the buildings, happily waiting for a table to enjoy classic breakfast foods with a twist, like this pancake board, which easily feeds three or four. You can choose from 3 Benedict options, a redBERRY parfait, or a selection of salads and sandwiches.
While Mykie runs the front of the house Chef Patrick is the king of the kitchen.  Chef took a few minutes out of his busy day to answer our 10 ? interview.
What is your favorite ingredient to cook with?
Eggs (one of the most versatile ingredients, in my opinion).
What ingredient do you dread?
Gelatin
What’s your favorite dish to make?
Pasta de Ovo (ravioli filled with runny egg yolk). I learned this just out of culinary school and it’s still to this day one of my favorites.
What’s your favorite pig out food?
Chips and salsa. Also carbs (rice, cereal, potatoes in any form, etc.)
What restaurant, other than your own do you like to dine at in the Miami Valley?
Roost in the Oregon District. It’s pretty much a go to for us when we’re lucky enough to have a holiday off!
What’s your best advice for home chefs? 
Mis en Place. Good home cooks master timing (finishing the whole meal at the same time). Getting all of your ingredients prepped prior to beginning cooking allows a home cook to concentrate on the task of cooking itself rather than trying to prep and cook at the same time.
If you could invite any 4 guests to a dinner party who would they be and why?
These are in no particular order. Anthony Bourdaine. He seems like he would have been a very interesting person to have a conversation with, he’d seen and done it all. Elon Musk, I would really like to be able to talk business with him and maybe get some pointers. Audie Murphy, a WWII combat veteran and one of the most decorated soldiers in American history. My last one would be Steve Irwin, you know, because it’s Steve Irwin.
Who do you look up to in the industry and why?
Probably Chef Robert Allen of Citico’s Lakeside Inn. I mentored under him right out of culinary school and he taught me a lot of what I know.
What do you do in the Miami Valley on a day off?
Play disc golf and ride my motorcycle.
Share a kitchen disaster, lucky break or other interesting story:
We once had a total sewage backup at redBERRY. Of course it was in the middle of Sunday  service, with a dining room full of people and a line down the sidewalk. We had to stop service, ask everyone in the dining room to leave, refund their money and tell everyone waiting that we had to close for the day. That was the easy part. After the restaurant emptied we had to wait for the plumbing company to come and fix the problem (which took hours into the evening and we couldn’t run any water at all until it was fixed), then wash and sanitize every single dish, utensil, pot, pan, bowl…literally everything in the restaurant that had been exposed to the air. Any paper products that weren’t still sealed had to be thrown away, not to mention having to clean up all of the waste that came up through the floor drains. Luckily, everyone was very understanding about the whole ordeal, and I suppose it could have been worse (like a fire or something), but it was an absolute disaster to say the least.

Quest for Dayton’s Best: Lasagna

As a kid, I grew up on Chef Boyardee’s Lasagna. You know the kind. It came in a box with a can of sauce, powdered cheese, and lasagna noodles. It was fast, easy, and not terribly delicious. When my parents wanted real lasagna, we drove to Lebanon and ate at the Tavern. It was the best lasagna in town. It was a single serving in a metal pan, covered in tons of melted stringy cheese, bubbling with housemade sauce and it arrived with a mini loaf of french bread doused in garlic butter. My parents loved this place and I loved the lasagna.

Recently I found myself eating really mediocre lasagna with my son. He is attracted to the free breadsticks and mediocre pizza at this national chain. I sat there poking the pasta looking for the cheese and sauce I fondly remembered as a kid. I never found it. So I had more breadsticks while mapping out a plan to find that lasagna I remembered as a kid.

 

I found it! We are surrounded by great Italian food here in Dayton.

Starting south of town I worked my way across the county and here is my report.

Troni’s Lasagna

Great lasagna isn’t far away. In Kettering, we have an abundance for every taste. While locals are divided between Jimmy’s Italian Kitchen on Woodman or Troni’s on Dorothy Lane, one thing is clear, the sauce is fresh and full of flavor. $8.99 gets you enough lasagna to demand an afternoon nap. Troni’s has a great salad and house dressing for their lunch special, Jimmy’s serves soup alongside their lunch. Troni’s delivered with pasta that was cooking perfectly and sauce with spice. Order extra garlic knots. Jimmy’s sauce is chunkier, which I like, and the rolls are soft and buttery, but I wanted the garlic and didn’t get it.

Mamma DiSalvo’s lasagna

I drove past Mamma Disalvo’s on the way to these two stops. The lasagna there is 100% Mama’s. The sauce is thicker, sweeter, and made with love. Mama’s lasagna is like my grandmas. The ricotta is noticeable and the pasta is cooked perfectly and still has a bite to it. It is covered in mozzarella and baked off to perfection. Order extra bread, you don’t want to leave any of that sauce on the plate.

For folks up north you aren’t far from great layered pasta and cheese either. Folks know Giovanni’s in Fairborn for their pizza and subs. Skip the pizza, order the lasagna. Portions large enough to share, you won’t want to but you could, and dinner prices make it so you can get the antipasto plate beforehand. Dinner is $13.00 with salad and housemade Italian bread.

My final suggestion for great lasagna in Dayton is Franco’s on 5th near the Oregon District. Franco’s has that old school Italian feel. Tuck in your shirt, grab a date and find a booth in the back. Settle in for great service and better food. Stop in for lunch and you will probably have Franco stop by your table. When ordering the lasagna at Franco’s get it with sausage in place of the beef. Get the salad with the house dressing and grab a napkin for your shirt. I’ve never had the beef lasagna at Franco’s because the sausage is always on point.
We are fortunate to have so many spots to grab a great pasta dish. On my quest to find the best, I rank these at the top. Other places to try include Palermo’s , Roma’s in Springboro and Napoli‘s in Miamisburg.

Quest For Dayton’s Best: Chicken Wings

The Buffalo Wing was an economical snack created in response to late-night bar patrons looking for a quick snack. In the now famed Anchor Bar in Buffalo, more than 50 years ago, the Buffalo Chicken Wing was invented. PS. The guys who started BW’s (BW3’s) were students at Kent State from Buffalo and wanted that treat from home, so they opened a place.

 

Now…Dayton has no shortage of places to get wings. Everyone is getting in on the wing business but a few in the area do it right.

 

Quick disclaimer, I can’t in good faith review a wing produced by any chain that specializes in pizza. Wings that are 40 minutes old and delivered in a cardboard box is just wrong. Secondly, I left out two locally famous wing joints. For the record, I love having a tall beer and a plate of wings from Roosters or Frickers. I enjoy both equally. But…for this quest, I went to the little spots.
Today I am talking Dayton’s best wings, my favorites. A place where you can always get a great wing. The best if you will. Here’s where I land in my quest for the best of Dayton chicken wings.
Lock 27

Lock 27 is making magic one wing at a time. These are smoked. Deep-fried and full of flavor unmatched in Dayton. These aren’t the 10-cent wings of your college days. Crispy, but insanely tender and makes you wish you got two orders. The hot option comes in habanero peach and the mild option is a dry rub full of flavor without the heat. Lock 27 doesn’t stop there. They are making the bleu cheese dressing by hand with a little sriracha for an extra kick.
Grab one of their beers to accompany. Nothing better to wash down an order of these wings.

These guys are more than brisket and pulled pork. Two reasons to make the drive north. Company 7 is smoking these wings in a wet marinade and then deep-frying to perfection when you order. These guys look like a standard naked wing until you take a bite. It’s the crispy fried wing you wish for with a smokey back-end you normally only get from a good slice of brisket or smoked pulled pork. The wing is one of a kind and is fall off the bone perfection so nothing is wasted.
Like Lock 27 you have options for beer to pair. Lock keeps 25 tabs of craft beers all the time. These wings are bold in flavor and will stand up to your favorite IPA or Dark Ale.

I like options. Nicks is a joint older than the chicken wing for which they’ve become famous. When I say options I mean options. Nicks offers their wings breaded or naked (no breading is my preference) and you can enjoy 14 different sauces.

I split my order between Original Hot and Sweet Bourbon BBQ. The BBQ is sticky and sweet with a hint of bourbon to keep it exciting. I like the hot with Bleu Cheese dressing. It’s the way the Anchor Bar intended.
Bonus…order your favorite wings with a waffle. Just try it. Something crazy good about a hot wing and a syrup-covered waffle and Nick’s does it right.

The World’s 2nd Best Wings. That’s how Archers bills them. These wings are huge and tasty. This is my go-to here in Kettering for a quick lunch. Available in Mild, Hot, Archer’s Style, Destroyer, Sweet BBQ, Hickory BBQ, and Chipotle BBQ. You guessed it, I get mine with the hot and always get the celery and bleu cheese. These are lightly breaded and deep fried. No tricks. Just good chicken with great flavor.
Keeping up with the theme of great wings and beer, Archer’s is no slouch in the beer area. They have 20 rotating taps but I stick with the Archer’s Ale. I’m a creature of habit and a good hoppy ale seems to work with the oil carried spice of a deep-fried wing.

This is a great pub that happens to have fantastic wings, and gyros, Reubens, burgers, and a bevy of deep-fried bar goodness. Try the wings first. Then go back again and again.

The group celebrated their 60th Anniversary throughout 2022. To mark this milestone, The Temptations released a brand-new album, Temptations 60, with nearly all-original songs in January of 2022 and toured in the U.S., United Kingdom, France, Germany, Belgium, and the Netherlands.

Bourbon Bar Now Open At Crafted & Cured in Troy

Tonight is the opening of the bourbon bar at Crafted & Cured in Troy.  I attended a preview night last night and all I can say is wow!  The building they are located in was originally constructed in 1929 as The First Troy National Bank and it is stunning.  The 13,000 square feet of space features the original architecture and one of the original safety deposit vaults.
Crafted & Cured  opened in Feb of this year but the addition of this 2nd story bar that offers a predominant collection of Bourbon, American Whiskey, Rye Whiskey, Irish Whiskey, Canadian Whiskey, Scotch Whiskey, International Whiskey, Private Barrel and Limited Release Selections makes a real statement. Crafted & Cured sought out the finest craftsmanship to construct the bars.  They partnered with a local company, Stull Woodworks, to design and build all three bars to enhance the natural beauty and original architecture.  Everything about the Crafted & Cured experience is intended to be unique, not like any other experience, product, or service. The Bourbon bar incorporates Hebe, Greek goddess, Wife of Hercules.  Depicted often as the cupbearer of the gods, pouring ambrosia from her pitcher. The goal at Crafted & Cured has always been to expand into an all-inclusive experience along with a full cocktail/mixology program with a bourbon-centric focus and now it has arrived.

As I approached the bar I was greeted by two familiar bartenders, Tim & Tyler, who many will recognize from serving up cocktails around Dayton.   The bar is also stocked with diverse house selections of Tequila, Vodka, Gin, Rum and other spirituous liquors. Their craft cocktail menu is broken into Seasonal, Classic and Signature Series cocktails.   You’ll find classics such as a Tom Collins, Old Fashioned, Manhattan, French ’75, along with seasonal offerings such as a Watermelon Spritz or Strawberry Siesta.  Signature Series cocktails include The C&C Sour, a Negroni/Boulevardier, and Goodnight Irene.
The first floor of the building hosts the 60 taps of craft beer, ciders, sours, and meads as well as the charcuterie station. Keep up with the changing beer selections on Untappd.  You can browse the Charcuterie menu and select a curated board or build or your own with the help of their Charcutiers. Cheese Boards include standard Charcuterie, plus (4) varieties of Cheese that rotate seasonally: wash-rind, semi-hard, bleu-veined, and semi-soft cheese along with house-cured grapes. The Dessert Board includes seasonal flavored Goat Cheese, Chocolate Thimbles stuffed with flavored Marscapone, Macaroons, Fresh Blackberries, Effie’s Cocoa Biscuits, house-made Chocolate Bark, Peanut Brittle and a Cream Puff with Hazelnut filling and Balsamic Pearls. Drizzled Chocolate, Vanilla Bean Syrup, and Powdered Sugar garnishes the board.
Have a seat while your board is being created  and notice that many of the tables have been made from the buildings original radiator overs. The Charcuterie bar was created from cabinets used by the bank that once graced this building. And by the time you’ve taken in all the fine details of the building your board will be delivered to you, along with a presentation of the individual make up of the board.
  Co-owner and Chef Christian Alvarez’s next focus will be on an extended food menu with sandwiches, salads and more offerings. Also coming are curated tasting experiences which will include bourbons and boards.  Subscribe to their newsletter via the website to find out about these special events before they are made public.  Coming on the ballot this fall in Troy will be a vote to add liquor sales on Sunday, currently they can just serve beer.
Private events are also a big deal at Crafted & Cured, where rentals start at just $200/hour and they are happy to custom create a menu for your special night.  They can host up to 120 on the 2nd floor and about 40 reception style downstairs in the Safety Deposit room.

Outback’s new ‘swicy’ menu embraces the sweet-heat trend

The Outback “Sweet Heat Season” Menu runs through Oct. 31 at the casual-dining chain, with hot honey leading the food-and-drink lineup.

The hot honey trend keeps on building buzz, with Tampa, Fla.-based Outback Steakhouse the latest chain to join in with its new “Sweet Heat Season” Menu.

The limited-time menu, which runs from July 26-Oct. 31, boasts several items with a sweet and spicy flavor profile as well as returning favorites and signatures.

“We’re excited to offer guests a diverse menu that complements the summer season,” said Becky Boyd, director of menu innovation & strategy at Outback’s parent company, Bloomin’ Brands. “Given Outback’s signature, bold flavors, the ‘swicy’ trend is a natural fit for us and appeals to all our guests because of its balanced flavor profile.”

Among the swicy food choices are Hot Honey Fried Chicken and Hot Honey Fried Shrimp, both featuring Outback’s house-made hot honey sauce. On the drinks side, there’s a Hot Honey’Rita accompanied by an at-home recipe so guests can shake up the margarita at home.

Guests can add hot honey to taste when they order Outback’s Hot Honey Rita cocktail. 

In the spirit of personalization, Outback serves the hot honey sauce on the side so diners can adjust the level of sweet heat by adding more or less to their dish or drink. The Hot Honey ‘Rita is served with a stirring dipper to make it easy.

Hot honey first started on its menu trajectory several years ago, when Brooklyn brand Mike’s Hot Honey began appearing on the table at local pizzerias to drizzle on a pie. Pizza is probably still its most popular application, with mega-chain Pizza Hut introducing a Hot Honey Pizza just this week, but it also shows up in chicken, breakfast sandwiches, grilled seafood, ribs and cocktails.

According to Chicago-based market research firm, Datassential, hot honey’s on-menu growth is projected to outpace nearly all other culinary and beverage flavors over the next four years.

Outback’s Sweet Heat Season Menu isn’t limited to sweet heat; it also taps into nostalgia. “We asked guests what menu items they missed most and heard their response loud and clear,” the chain said in a statement. The fan-favorite Wedge Salad is back, featuring a giant wedge of iceberg lettuce with sliced cherry tomatoes, red onion and classic blue cheese dressing.

And in keeping with Outback’s Australian theme, there’s a new dessert on the menu—the Tim Tam Sundae. Tim Tam is an Australian “bikkie” (chocolate-covered cookie) that is exclusive to the chain and has won over Outback regulars.

Calling All Photographers: Glen Helen Seeking Submissions For Calendar!

Glen Helen is seeking creative images for the 2024 Glen Helen Wall Calendar!

They invite both first-time visitors and longtime friends to send in photographs taken in the Glen including landscapes and natural attractions in the preserve, macro, and micro pictures of flora and fauna, and resident birds at the Raptor Center.

The winning images will be judged on aesthetic merit as well as how well they combine with other images to create an attractive calendar.

Proceeds from calendar sales are a significant annual fundraiser for Glen Helen, contributing to the continued protection and restoration of Glen Helen’s 1000-acre nature preserve and the programs of Glen Helen’s Raptor Center, Outdoor Education Center, and Trailside Museum.

For consideration, please submit photos and a release form online by 5 pm on August 18th, 2023

  • All submissions must be received by email, accompanied by a photo release form. Among other things, the photo release form states that the photographer gives the Glen Helen Association non-exclusive rights to use the design in perpetuity for no fee.

  • You may submit as many photos as you wish. However, please note, only 4 images from an individual photographer may be chosen for the calendar.

  • Photographers whose work is chosen for the calendar are credited and receive a free 2024 calendar.

  • All images submitted must be the submitter’s original work.

  • Electronic images should be saved as .tiff or .jpeg files, please upload photos in the highest resolution available.

  • Tips: Only horizontal color shots are accepted for the calendar. Vertical images are not a suitable fit. The calendar requires a variety of image styles and subject matter—landscape images, macro shots of flora or fauna, seasonal or weather-related images and lesser-known sights in the Glen are encouraged. Photos that include people are generally not accepted for the calendar.
