10 ?’s with Chef Carrie Walters

Carrie Walters is the Corporate Chef for Dorothy Lane Market and is responsible for researching and developing new recipes, menus, and programs. She plays a key role in the  annual Food and Wine Show (which always sells out)  and other special events for DLM. As a food stylist, she has designed in-house food shots for the DLM website, and electronic and print publications, in addition to television commercials and other multimedia venues.  Here she shares some tips to make your holiday cooking easier:

Carrie is an accomplished chef who has been the keynote speaker for many groups, ranging from ten to over 300 people. One of the most  popular instructors at the DLM School of Cooking, Carrie teaches a variety of classes, always with her approachable demeanor, contagious enthusiasm, and interactive teaching style. A classically trained chef, Carrie earned her culinary degree in Seattle.

What is your favorite ingredient to cook with?

I would have to say beef. At DLM we have the best beef in the business. All it needs  is some simple cooking methods and some salt and pepper.

What ingredient do you dread?

Red and Green Bell Peppers. I think they are over used! Yes, their color adds a lot to a dish but their flavor tends to overpower everything else.

What’s your favorite dish to make?

At home with the change of season I like to braise a lot. I make a lot of pot roasts, soups and  anything else with sauce! Another dish I keep coming back to is roast chicken, It makes everyone in my house happy and the leftovers are great!

What’s your favorite pig out food?

Thai and Vietnamese-I love all the fresh clean flavors. I like the combinations of fresh herbs, citrus and chiles. I think I could eat shredded papaya salad everyday and never get sick of it.

What restaurant, other than your own do you like to dine at in the Miami Valley?

I love Linh’s, Akashi, and House of Thai for my Asian fix. I’ll take Meadowlark for lunch any day of the week!

What’s your best advice for home chefs?

Cooking really supposed to be fun and relaxing. Don’t over think or stress about it.  Its all about getting to sit down with people you love and share some food. Make it simple.

If you could invite any 4 guests to a dinner party who would they be and why?

I’d cook for my parents who never got the chance to know me as a grown woman and 2 of my favorites Chef Instructors from my culinary school days. I’d cook some of my Mom’s old favorites with my own twists. All executed, of course,  with the classic skills Chef Hawley and Chef Ruegg taught me.

Who do you look up to in the industry and why?

I really respect both Norman and Calvin Mayne. They let me do what I am good at!  I love being able to wear lots of hats-creating recipes and programs, writing and teaching. DLM is a company that I am proud to represent .

What do you do in the Miami Valley on a day off?

A perfect day would be to take an early hike at either the Gorge or Sugarcreek Reserve  with my family , then maybe do a little shopping at the Greene and then see a movie or a play. Unfortunately the reality of my time off is trying to catching up with all the laundry and running my kids around!

Share a kitchen disaster, lucky break or other interesting story:

We were filming a TV show with Sara Moulton at the School of Cooking  a couple of years ago and one of the dishes were supposed to be a specific type of chicken There was a live audience watching my every move waiting for Sara to show up. Our chickens never made the air flight to Dayton so last minute I had to use solid frozen Cornish hens for the camera. I had to “paint” on some color for the birds to look cooked. I used a concoction of kitchen bouquet, molasses and soy sauce. Even after all that we still had a couple audience members wanting to taste those birds!

CultureMash-New Media Group Gives Back!

A group of young professionals  with the desire to give back to our community and share their skills and success with new media is set to launch Dec 2nd at a kickoff event at Wright State. More details here.

But even before they’ve launched they have jumped into action helping with a campaign to help a local family get visibility and help for their young son who suffers from unexplained seizures.  The story itself is heart wrenching, as you’ll read below.

But what makes this story more relevant is that while facing so much in his personal life, David Bowman has spent years touting the influence of social media.  He’s perhaps our area’s most respected and giving authority on new media.  Several years ago when I first launched DaytonDining as a ning site, I needed help.  I had seen David’s name around town and knew he had experience with these sites.  I emailed him, offering to pay him for help and within the hour he emailed back, with the help I needed and even more resources for me.  And wouldn’t even think about taking my money.  In subsequent meetings, he proved that he’s truly all about spreading his love for social media and his dreams of educating the Dayton region into being a hub of experts in new media.  He is the driving force behind the creation of Summitup, which just held it’s 2nd annual social media conference last month.  He’s a man that makes an impact.

As Richard J. Kaiser put on his facebook page, “I thought about leaving Datyon..if you want to thank the man who kept me here, please sign up to Send Jude Bowman’s Story to Ellen Degeneres…David Bowman is the reason why I’m staying in Dayton and continuing to help make this city great!”

Dear Ellen,

We are the many friends and family members of the Bowman Family.  We are all coming together to ask for your help for their four year old son Jude.  We realize that there are millions of people in the world facing difficult times, be it financial, personal, or medical.  We know that some problems seem more at crisis levels than others, but to each of these people and each of these families, finding help is paramount.  This is the Bowman’s story and our plea for help for them.

Upon meeting Jude, one might never suspect or imagine that he is anything but a happy healthy child.  He is handsome, charming, funny, and bright.  However, spend more than a passing moment in his presence and one would most definitely become confused and maybe even a bit uncomfortable.  Jude’s eyes often roll uncontrollably upwards, he will lose muscle control, enter into a coma-like stare, and frequently fall unconscious for several seconds at a time.  His parents, David and Colleen, will hold him until the episodes pass, as if nothing is happening, because it has become the family norm.  It is a scary experience for anyone to witness, but even more so when you realize that the Bowman’s have no way of explaining why this has happened; they themselves have no reasons, or explanations.

Jude has undergone virtually every neurological test.  He was initially diagnosed with epilepsy and was treated with six different medications, including rescue drugs, to treat what the Bowman’s were assured to be seizures.  After two years of experimenting with different combinations and doses of medications, the Bowman’s realized that the medications were not helping to control the “seizures”.  The symptoms and aftereffects of the “seizure” activity were increasing in occurrence and severity.  None of the medications stopped the “seizures” from occurring or made Jude’s life any more normal.  While taking these medications, Jude would become disoriented.  He would not recognize people or things in his own home environment.  He continued to experience involuntary eye movements in which his eyes would roll up into his head, often followed by instances of collapse.  The family has called the paramedics numerous times as he has stopped breathing in their arms.  He has been hospitalized six times in two years and has been studied under video monitoring four times.  Jude has experienced more testing than any child should have to endure.  The most difficult part of the testing has been the outcome; all of the results have been inconclusive.

Disoriented, confused, lethargic, isolated, uncoordinated, and frustrated are not words one would wish to use to describe anyone, let alone their four year old child.  Watching Jude with other children is heartbreaking.  His energy level is no where near that of the children with whom he tries to play and he can often be found sitting by himself like an outsider.  He often collapses while walking up and down stairs and there are some days that Jude loses control of body movement and has to be held.  There are many periods where he cannot identify Colleen, David, and his sister Ella.  He frequently asks Colleen and David to help him and all they can do is hold him while his mind and body break down.  Most people have had to watch their children struggle with something at some point in their lives; the Bowman’s spend every day watching Jude struggle with everything, from eating dinner to running through the backyard.  The powerlessness they and everyone who knows and loves Jude feels is all consuming.

Jude and the Bowman Family could use a helping hand.  The past four years have been filled with great happiness and life experiences for the Bowman’s.  That same four years have been filled with fear, anger, acceptance, constant doubt, medical research, medical testing, foreign medical jargon, and sadness.  Jude has been diagnosed with everything from benign reflux,  severe epilepsy, Paroxysmal Tonic Up-gaze (PTU), to the most recent diagnosis: unknown.  The Bowman’s have trusted in medical professionals who have medicated, over and over again, a baby who could not even walk or talk, to a four year old who can’t even begin to look forward to starting school next year as his condition continues to slow his physical abilities.  Jude’s case does not seem to fall into a clear diagnosis, so he is passed from doctor to doctor with still no results.  Colleen and David have begun their own quest for answers.  With limited resources, their path toward any resolution is quite daunting.  Obtaining all of Jude’s medical records has become a monumental task.  Hours upon hours of research has been logged every night.  They have applied for a service dog in the hope that Jude can develop a bond with someone who can help him during these episodes and help to create a small bit of independence for him as he gets older and more aware of his condition and limitations.  The financial, physical, and emotional toll it has taken on their family must be overwhelming.   As I watch their family struggle day after day, I am inspired by their courage and spirit.  I am trying to extend a much needed helping hand and am hoping you or someone you know might be able to help them as well.

If there is anything we would ask of you, it is simply for exposure.  Exposure so that the Bowman’s can hopefully find a cure for Jude or ultimately find answers and treatments that will enable Jude to live a healthy fulfilling life.  We fervently hope that one day soon, someone will see Jude’s story and be able to help.  Thank you for your time and consideration.

Finding Wines to Pair With Your Turkey

Thanksgiving- it’s a time to celebrate with friends and family, yet at this time of year you often hear people asking what wine pairs well with Turkey? If you’ve been asked to bring the wine or have people coming to your house for holiday dinner, no need to stress about what to serve. The good news is there is no correct answer. Turkey pairs well with red wine or white wine depending on what you and your guests like. Turkey is adaptable and the way it’s prepared as well as other dishes to the meal really dictate what wine to pair it with.

If you are a red wine drinker, try a Pinot Noir. It’s a nice flavored red wine that will pair well with turkey. Pinot Noir has very little tannins which means it won’t overwhelm the meal. Putting the Pinot Noir in the refrigerator for about 20 minutes before serving it will bring out the fruit and will take away the ‘bite’ that alcohol can give when served at room temperature.

If you like white wines, try a Chardonnay or even a Pinot Gris.  Almost any good white will work, but stay away from the sweet dessert style whites. Light and crisp Chardonnay’s  along with most Sauvignon Blanc’s will work.  Sparkling Wine also works  and brings a festive note to the meal. There are some powerful, yet affordable brut Champagnes that have sufficient weight and structure to stand up to a rich meal. Again, stay away from the sweeter Champagnes.

Foursquare Equals Freebies at Chain Restaurant

Fans of the smartphone application Foursquare can now earn free food at McCormick & Schmick’s when they check in during happy hour. You’ll have your choice of beer battered mushrooms, black bean hummus, fried zucchini or salmon cakes, as long as you check in and purchase a drink – alcoholic or not.Happy hour runs from 3-6pm and all day Sunday in the bar area.  And don’t forget every Tuesday night you can enjoy $1 oysters as well.

Chef Ming Tsai Back in Dayton

Ming Tsai grew up in Dayton, cooking with his parents and grandparents in the family restaurant, Mandarin Kitchen.  Then he went off to Yale, studied to become a mechanical engineer.  But after a trip to Paris, he realized that food was going to be his career.  He enrolled at the Cordon Bleu and worked to integrate his passion for French Cuisine with his Chinese cooking roots.  Now years later he’s established himself as a master of East meets West dishes, as featured on his own Food Network show.  He’s gone on to become a successful author as well, and his fourth book is the motivation for this trip to Dayton.  His first cookbook , Blue Ginger, is names after his Weley, MA restaurant, opened in 1998 with his wife Polly.  Since then, Simply Ming, and Ming’s Master Recipes were released.

Tsai recently guest starred on an episode of Top Chef , opened Blue Ginger Noodle Bar, a mini-restaurant, inside Blue Ginger and  is currently competing for the “Next Iron Chef” on the Food Network Channel.  Ming will be in town on Thurs, Nov 4th at ThinkTV for a book signing and meet & greet for his latest book: SIMPLY MING ONE-POT MEALS. Tickets  are $32 per person or per couple and include wine, beverages, light hors d’oeuvres and a signed copy of the new cookbook. RSVP deadline is Tuesday, Nov. 2. No Soup For You! Ok- Soup For You!

Remember “the Soup Nazi” on Seinfeld? Larry Thomas who gained fame as a recurring Seinfeld character  will host a “Soup Off” in Dayton on Friday, October 29th from 5:30 – 8:30pm at the Doubletree Guest Suites, across from the Dayton Mall. All proceeds from this event will be used to benefit the work of A Doctor’s Heart, Inc.

Area restaurants like Brio Tuscan Grill, C’est Tout a Bistro, Chef Rahn – Artizan Bread, Jay’s Seafood, DoubleTree, Bullwinkle’s Top Hat Bistro, Amber Rose Catering and Restaurant,  L’Auberge and Christopher’s Restaurant and Catering are among the local eateries that will be providing soups.  The Doubletree Hotel in Miamisburg is donating the complete use of their banquet facilities, kitchen, and serving personnel.

Your $12 donation will not only get you to a great evening of fun and a complete soup dinner. More importantly it will allow A Doctor’s Heart to fund fish farms, clean water wells and missionary housing in remote areas of the Amazon River basin. The goal is to have 400-600 people attend and join in helping improve the lives and health of these deserving people. Remember, this is a fund-raiser. Feel free to donate much more than $12!!

“Soup Off” attendees will be treated to screams of “No Soup For You!” as the Soup Nazi bangs his ladle and serves as judge and jury for best soup in a “Soup Off”. Who better to judge a fabulous selection of soups contributed by area restaurants and friends than the Soup Nazi! As an added treat, autographed ladles and pictures with Larry will be available for a modest additional donation.

Cash Bar, door prizes, a variety of soups and lots of laughs will be available from 5:30 – 8:30 in the Main Lobby, Lobby Bar, Patio and Ohio Room at the Doubletree in Miamisburg. Please park next door at Cub Foods, and enter through the Doubletree’s Main Entrance. Enjoy the entertainment and a complete soup dinner for a $12 donation. “A Doctor’s Heart is a small group doing very large work in the Amazon River Basin,” said Larry Thomas at a media event recently. “Every dollar they raise will be spent on medicine and eye glasses, wells, and houses for Missionaries serving the native tribes of the Amazon River Basin.”

The Boy Scouts Need You!

DODGE, DUCK, DIP, AND DIVE

at the Second Annual Dayton Corporate Dodgeball Tournament benefiting the Boy Scout program in the Miami Valley and surrounding areas. This double-elimination tournament will be held Saturday, October 30, 2010 at the Ervin J. Nutter Center.

Team registration begins at 9am with an all team meeting at 10:30am. The first ball out is at 11:00am.  Only 48 teams will be accepted for the 2010 Corporate Tournament. The cost of entering a team into the tournament is $300 (100% Tax Deductible). All dodgeball players will receive a free Frickin Dodgeball T-Shirt. Tournament teams consist of 6 players and up to 4 subs. Team t-shirts/uniforms are encouraged. The tournament will be held on Saturday, October 30th. Stone Brewing Company Beers featured in Spinoza Dinner

This West Coast Brewer is known for it’s big aggressive beer flavors, probably the most popular being Arrogant Bastard Ale.  Spinoza’s will pair a food course with 6 of their big beer flavors on Tues, Oct 26th in what have become monthly beer dinners at this Beavercreek pizzeria, located at The Mall at Fairfield Commons near Sears. Advance reservations are required and can be made be calling Spinoza’s at 426-7799  for a very reasonable $26.95 per guest plus tax & gratuity.  The menu is as follows:

WELCOME

Stone Levitation Ale Style: American Amber Ale ABV: 4.4%

This deep amber ale has rich & roasty malt flavors, a big hoppy character, citrus overtones (courtesy of the hops and special brewers yeast) and modest alcohol.

Paired with Bruschette with Herbed Ricotta Cheese and Stone Pale Ale Pearls

APPETIZER

Stone IPA Style: American IPA ABV: 6.9%

Look up ‘hops’ in the dictionary and you’ll see a picture of Stone IPA! ‘Dry-hopped’ for an extra two weeks, this unique process gives this India Pale Ale its bountiful hop aroma and rich hop flavor. A full 70+ IBUs (International Bitterness Units) creates this beer’s crisp and refreshing bitter character.

Paired with Roasted Garlic IPA Soup

SALAD

Stone Vertical Epic 10-10-10 (draft)            Style:Belgian Strong Pale Ale |  9.50% ABV

‘Fermented with the legendary Ardennes strain of Belgian yeast, 10.10.10 is a Belgian Strong Pale Ale brewed with pale malt and triticale (a cross of wheat and rye), hopped with German Perle hops, and steeped with chamomile during the whirlpool stage. In secondary fermentation, we added a juice blend of Muscat, Gewurztraminer, and Sauvignon Blanc grape varieties.

Paired with Organic Petite Spring Mix with Hibiscus Leaf, Baked Goat Cheese, Hard Boiled Quail Egg, and Saison du Buff Vinaigrette

INTERMEZZO TASTE

Stone Smoked Porter Style: American Porter ABV: 5.9%

A rich, dark and delicious porter with chocolate and coffee overtones accented by a subtle smokiness from just the right amount of peat smoked malt. The ‘smoke’ in Stone Smoked Porter is an ELEMENT of the character rather than being THE character.

Served with Danish Havarti Cheese

ENTRÉE

Oaked Arrogant Bastard Style: American Strong Ale ABV: 7.2%

This is an aggressive beer. According to Stone Brewing, you probably won’t like it. But we know that you, as an adventurous Spinoza’s Beer Dinner guest, have the taste and sophistication to appreciate an ale of this quality and depth.  Oak chips are introduced to this version for an added dimension.

Paired with Deep Dish Pizza of Sweet Italian Sausage, Sautéed Midwest Chanterelles, San Marzano Tomatoes, Asiago, Mozzarella, and Provolone Cheese with an Arrogant Fennel Pizza Sauce

DESSERT

Sublimely Self-Righteous Ale (draft) Style: Cascadian Dark Ale ABV: 9.1%

When you do something great, the least you can do is acknowledge it. In this case, Stone was compelled to point out how amazing this beer is by justifiably calling it “Sublimely Self Righteous Ale”. First brewed in 2007 as Stone’s 11th Anniversary Ale, this beer was an instant hit.

Paired with Pumpkin Brulee with Self-Righteous Whipped Cream and Cinnamon-Nutmeg Pepitas

All You Can Eat Chocolate Party

Betty Blose, owner of Bellbrook Chocolate Shoppe, and her staff will host their 11th annual All You Can Eat Chocolate Party this Sunday, Oct 24th from 4-6pm.  The workroom counters will be filled with caramels, turtles, chocolate covered nuts and chews, shortbread cookies, peppermint bark, chocolate peanut brittle and more.  There is nothing fancy about this event, it’s just hundreds of pounds of chocolate there for the tasting!  Your $15 admission includes  a bottled water, which you’ll need to wash down the chocolate treats.

All funds raised during the event will go to provide mammography services to underserved/underinsured Dayton area women/men. Tickets are available at the Shoppe which is located in the Cross Point Centre at 101 E. Alex-Bell Rd. Suite 144  Centerville OH 45459. 937-436-5066

All You Can Eat Pancakes Rotary Fundraiser

Centerville Rotary’s 10th Annual Pancake Breakfast will be held at the Hithergreen Center, 5900 Hithergreen Drive on Saturday, October 23 from 7:00 am to  noon and all are invited and encouraged to attend. Cost is six dollars per person, which includes all-you-can-eat pancakes, sausage, applesauce and beverages, served by Rotary and Centerville High School Interact Club members. Tickets may be purchased in advance from any Rotarian or at the Hithergreen Center, and are also available at the door the day of the breakfast.

The Hithergreen Center is in Washington Township and can be easily accessed by turning east on Brookmount Drive off Far Hills Avenue (the first street north of Whipp Road) and then turning right on Hithergreen Drive. Free parking is available.

Proceeds from the breakfast benefit club projects such as college scholarships, Centerville Schools activities, Holiday Food Baskets, Polio Plus-World Eradication Program, Local and International Service Projects and more. Fresco Serves Up Fresh, Flavorful Family Meals

Chef Jenn DiSanto opens up her long awaited Fresco this Wed, Oct 20th,  in the Fountain Square Shopping Center on Far Hills Avenue, just south of Dorothy Lane.  If you missed our earlier 10 questions with Chef Jenn, you can read it here.  Fresco will have  a variety of already prepared menu items for carry-out that are ready for you to enjoy when you walk in. Additional made to order menu items are made fresh using the finest ingredients available. Place your order from the weekly menu posted on the website, call for the menu or stop by. There is no need to call ahead- you are more than welcome to place your order and just relax for a moment while we prepare it.

While they specialize in food to go, you can  join them for lunch in.  They will have a small seating area where you can dine or just wait while they prepare  your individual or family style dinner to talk home and just re-heat later!  If you do prefer to call in ahead so your order is ready to pick-up on your way home please be sure to let them know the time you will pick up, the items you would like and if you want a single order or family style (4 servings).

The carry-out menu is available for lunch and dinner Monday- Friday 11:30-6:00 (other arrangements may be made to accommodate orders when possible)

How it works:

  • They have a weekly menu posted on their website or you may call to inquire about the weekly offerings. They’ll have some  Panini’s, salads, soups and lighter fare for lunch and an additional menu of amazing dinner entrees for you to choose from.
  • Stop by and place your order and they will make it right then or you may call ahead by calling 937-296-0600.
  • Now all you have to do is drive home safely, re-heat your meal(s) (following the simple re-heating instructions they provide with each meal) and enjoy top quality, preservative-free, gourmet meals in the comfort of your own home!

Here’s the menu for their very first week, valid through Oct 29th:

Sandwiches- Served with house-made potato or sweet potato chips. Additional Panini’s and sandwiches may be available so please call and ask.

Braised BBQ Beef sandwich – slow braised beef brisket with house made BBQ sauce. Served with Vidalia onions on a seeded Kaiser roll – with or without jalapeños $8.00

Grilled vegetables on house made focaccia – grilled eggplant, zucchini, yellow squash and oven dried tomatoes on focaccia with basil, balsamic reduction and crumbled goat cheese $8.50

Grilled Chicken and Caprese Panini – Grilled chicken, oven roasted tomatoes, fresh basil and fresh mozzarella on classic Italian bread – grilled on the Panini press $8.50

Grilled Chicken and green tomato chutney Panini – grilled chicken, sharp white cheddar or crumbled goat cheese and a slightly sweet and totally herby green tomato chutney all Panini press grilled on farmhouse bread $8.50

Roasted turkey Panini – roasted turkey, roasted peppers, roasted tomatoes, arugula, provolone and garlic aioli on Panini grilled Italian bread $7.50

Honey baked ham Panini – slow roasted honey baked ham with cheddar and champagne mustard on Panini grilled farmhouse bread $7.50
